Fajita Veggies – a super quick and easy recipe for grilled fajita veggies just like at Chipotle or your favorite Mexican restaurant. They are ready in minutes and are great for taco night, in a quesadilla, on top of salads and so much more!
If you are a frequent customer of Chipotle then you know fajita veggies were added to the menu in the last couple years, and they are a great addition to anything. Don’t get me wrong, they are a must when you make Chicken Fajitas, but they are also delicious in so many other ways.
This Chicken Fajita Salad is epic when you add a few of these grilled veggies to the top. Such an easy addition to make the salad really shine.

The best part of this recipe is just how easy and versatile they are to make. It takes just about 15 minutes over high heat for the veggies to get crisp-tender and perfect. You will notice a few spices in the ingredient list, if you want to take a short cut you can use a packet of fajita seasoning mix from the grocery store to make it even easier!
Plus you can add more veggies. One of my favorite Mexican restaurants adds big slices of tomatoes that are added to the peppers during the last few minutes of cooking. You could also add mushrooms or even zucchini

What You’ll Need
- Bell Peppers – you can use any color that you like. I like to do a mix, but if you have a few green peppers on hand, then use all green.
- Onion – again you can use any color; red, yellow or white all work perfectly in this recipe.
- Chili Powder
- Ground Cumin
- Paprika
- Garlic Powder
- Onion Powder
- Salt & Pepper
- Olive Oil

How To Make Fajita Veggies
- Start by thinly slicing all of your veggies so they are about the same size. Onions and bell peppers take the same amount of time to cook, so you want the cut in similar sized pieces.
- In a bowl toss together the peppers and onions with the olive oil and the seasonings. Mix until everything is evenly coated.
- Next heat a large skillet over medium high heat, add the remaining oil to the pan. Once it is hot, add the veggies to the pan. Cook for about 15 minutes, stirring frequently until they are tender and starting to brown.
Seasoning Fajita Veggies
If you have a packet of fajita seasoning from the store, you can definitely use it here. But it is not necessary and with just a few spices you can make your own in about 1 minute! I recommend until about 2 Tablespoons of the packet for the amount of veggies called for in this recipe, if that is the route you go.
If you are used to Chipotle fajita veggies, you will know that they really only season theirs with a little salt and dried oregano. But I like mine to have more flavor, so I use a more traditional style fajita seasoning.

How To Use Fajita Veggies
You really can use these veggies in so many different ways. Put them on Chicken Tacos or inside an Air Fryer Quesadilla. Here are a few other tasty ideas as well:

Ingredients
- 3 bell peppers (any color)
- 1 red onion
- 3 Tablespoons olive oil
- 2 teaspoons chili powder
- 1 1/2 teaspoons ground cumin
- 1 teaspoon paprika
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
Instructions
- Thinly slice bell peppers and onions, so they are about the same size.
- In a bowl toss together 2 Tablespoons of olive oil with the sliced peppers, onions, and the remaining spices until everything is well coated.
- Heat a large skillet over medium high heat. Add the remaining 1 Tablespoon of oil. Once it is hot add the pepper mixture and cook for about 15 minutes, stirring frequently until the peppers are tender and starting to brown.
- Remove and serve.
