Fajita Veggies - a super quick and easy recipe for grilled fajita veggies just like at Chipotle or your favorite Mexican restaurant. They are ready in minutes and are great for taco night, in a quesadilla, on top of salads and so much more!
Thinly slice bell peppers and onions, so they are about the same size.
In a bowl toss together 2 Tablespoons of olive oil with the sliced peppers, onions, and the remaining spices until everything is well coated.
Heat a large skillet over medium high heat. Add the remaining 1 Tablespoon of oil. Once it is hot add the pepper mixture and cook for about 15 minutes, stirring frequently until the peppers are tender and starting to brown.
