Instant Pot Spanish Rice - tastes just like the Mexican rice for your local Mexican restaurant. It comes together in just minutes, with pantry staple ingredients you probably have on handalready!
Set Instant Pot to sauté , add the olive oil and butter. Once the butter is melted and it is hot add the onions and garlic and cook for 3-4 minutes until the onions are soft.
Meanwhile rinse the rice. Add the rice to a colander and rinse it well. This will help the rice become light and fluffy and make sure you don't get the burn notice on the Instant Pot.
1 1/2 cups long grain white rice
Once the onions are soft, add the remaining ingredients to the pot and stir until everything is well combined.
2 cups chicken broth, 1 teaspoon salt, 1 teaspoon chili powder, 1/2 teaspoon cumin, 8 oz tomato sauce
Put the lid on, lock it in place, and ensure the vent is closed. Change to High pressure and cook for 3 minutes.
Once 3 minutes is up, let the pressure naturally release until it unlocks.
