Season your pork chops evenly with salt, pepper and garlic powder. Heat a large skillet over high heat, add the olive oil and sear the pork chops for 2-3 minutes on each side. Remove them from the pan and cover with foil to keep warm.
Reduce the heat to medium, add the butter and let it melt. Add in the onions and cook for about 5 minutes until the onions are soft.
Add in 1/4 cup of beef broth, and cook for 10-15 more minutes until they are golden brown. Make sure to stir frequently.
Meanwhile preheat oven to 400º F.
Sprinkle the flour over the onions and stir until it is fully incorporated. Add the remaining broth and dried thyme. Simmer for just a minute, it should start to thicken quickly.
Add the pork chops back to the pan, covering with the onions.
Sprinkle the cheese over the pork chops and bake for 8-10 minutes, until the cheese is melted and the pork is cooked to 145º internal temperature.
