French Onion Pork Chops – thick pork chops smothered in a sweet caramelized onions and melted cheese. A weeknight meal dream come true!

If there is one thing that my entire family can agree on it is caramelized onions should really be incorporated in more things! Caramelized Onion Dip is a frequently requested appetizer and French Onion Soup is a must all winter long.

These French Onion Pork Chops are a combo of some of our favorites, you know we are huge pork eaters. And it really is a match made in heaven.

  • The thick pork chops absorb all that beefy brothy flavor with the caramelized onions and makes for the most comforting dinner.
  • You really can have this on the table in about 35 minutes. The oven helps finish the cooking, but you can use the stovetop just as quickly if you don’t have an oven safe skillet.
  • That gooey cheese is a must, and you can mix it up with whatever your favorite type is. I used Gruyere, but you can use Provolone, Swiss, Mozzarella or whatever you like.

What You’ll Need

  • Sweet Onions
  • Butter
  • Olive Oil
  • Beef Broth
  • Pork Chops
  • Dried Thyme
  • Garlic Powder
  • Salt & Pepper
  • Flour
  • Gruyere Cheese

Adding fresh thyme as a garnish at the end of cooking takes it to a whole new level! So if you have some use it, it will really enhance and bring out the flavors.

How To Make French Onion Pork Chops

  1. Season your pork chops evenly with salt, pepper and garlic powder. Heat a large skillet over high heat, add the olive oil and sear the pork chops for 2-3 minutes on each side. Remove them from the pan and cover with foil to keep warm.
  2. Reduce the heat to medium, add the butter and let it melt. Add in the onions and cook for about 5 minutes until the onions are soft. Add in 1/4 cup of beef broth, and cook for 10-15 more minutes until they are golden brown. Make sure to stir frequently.
  3. Sprinkle the flour over the onions and stir until it is fully incorporated. Add the remaining broth and dried thyme. Simmer for just a minute, it should start to thicken quickly.
  4. Add the pork chops back to the pan, covering with the onions.
  5. Sprinkle the cheese over the pork chops and bake for 8-10 minutes, until the cheese is melted and the pork is cooked to 145º internal temperature.

You really can serve just about anything with these, but here are a few of my favorites.

Recipe Tips

  • Try to get a thick cut pork chop. Ideally you want about 1 inch thick. This way they don’t cook too quickly while the cheese melts and you are searing them. No one likes dry pork chops!
  • Use a thermometer to know when your pork is done. Most people who don’t like pork say it is because it is dry. That happens when you over cook it. Pork is done when the internal temperature is 145º. So keep an eye on it, and don’t go over.
  • Mix up the cheese! I use Gruyere cheese, but you can use Provolone, Swiss, Mozzarella or whatever other cheese you like. Even a blend of cheeses would be delicious.
  • If you don’t have an oven safe skillet, just cover the pan after you add the cheese. This will help trap the heat so the cheese can melt, and continue to cook the pork chops.

Storage

These French Onion Pork Chops do work well for leftovers for lunch the next day. But it isn’t one of those things you want to make ahead and have lots of them prepped in the fridge for the week. Simply reheat in the microwave, I like to cut the pork into slices before heating, so it doesn’t over cook the outside too much before the center gets hot.

Ingredients

  • 4 thick cut pork chops
  • 1 Tablespoon olive oil
  • 1/2 teaspoon garlic powder
  • Salt & pepper
  • 2 large sweet onions, thinly sliced
  • 3 Tablespoons butter
  • 1 1/4 cup beef broth, divided
  • 2 Tablespoons all-purpose flour
  • 1/4 teaspoon dried thyme
  • 1 cup Gruyere cheese, shredded

Instructions

  1. Season your pork chops evenly with salt, pepper and garlic powder. Heat a large skillet over high heat, add the olive oil and sear the pork chops for 2-3 minutes on each side. Remove them from the pan and cover with foil to keep warm.

  7. Sprinkle the cheese over the pork chops and bake for 8-10 minutes, until the cheese is melted and the pork is cooked to 145º internal temperature.
  8. Remove and serve immediately.
