In a large bowl, mix together the diced potatoes with 2 Tablespoons of the olive oil and season to taste with salt and pepper.
Place the potatoes in a 13x9-inch baking dish, and spread into a single layer. Bake for 35 minutes.
While the potatoes cook, toss together the diced chicken, broccoli, paprika, garlic powder, and remaining olive oil, and season to taste with salt and pepper.
After the potatoes have baked for 35 minutes, remove the baking dish from the oven. Add the chicken mixture, and mix until everything is well combined. Place back in the oven for 15-20 minutes, until the chicken is mostly cooked and the potatoes are tender.
Remove the casserole from the oven and spread the shredded cheese evenly over the top. Sprinkle the bacon over the cheese, and bake for an additional 5 minutes, or until the cheese is melted.
Remove from the oven and serve with sour cream and green onions if desired.
Notes
Store leftovers in an airtight container in the fridge for 4 days or in the freezer for 6 months.
Reheat in a 350F oven for 15 minutes, or in the microwave in 30-second increments.
