Pumpkin Blondies
Pumpkin Blondies are soft, cakey bars made with pumpkin puree, warm fall spices, and white chocolate chips. An easy one-bowl dessert, no mixer needed.

Ingredients

Instructions
Preheat oven to 350º F. Grease an 9 inch pan or line with parchment paper.
In a mixing bowl whisk together brown sugar and egg until it’s light in color.
1 cup light brown sugar,
1 large egg
Add in melted butter, pumpkin and vanilla and mix until very well combined.

1 cup pumpkin puree,
2 teaspoons vanilla extract
In a separate bowl combine the flour, baking soda, pumpkin pie spice and salt.
1 1/2 cups all-purpose flour,
1 teaspoon pumpkin pie spice,
1/2 teaspoon baking soda,
1/2 teaspoon salt
Add the flour mixture to the wet ingredients, and stir until everything is just incorporated.
Fold in the white chocolate chips.
3/4 cup white chocolate chips
Pour batter to the prepared pan. Bake for about 22-25 minutes. The top will be dry. Cool completely before cutting.
