Pumpkin Spiced Granola
Pumpkin granola is loaded with cinnamon, pumpkin puree, pumpkin seeds, and dried cranberries for the ultimate cozy fall breakfast or snack.

vegetable, avocado or canola

maple syrup

teaspoon
vanilla extract

dried cranberries
Instructions
Preheat oven to 325º F. Prepare a large baking sheet with parchment paper or a silicone liner.
In a large bowl mix together oats, pumpkin seeds, brown sugar, cinnamon and pumpkin pie spice. Mix until everything is evenly combined.
3 1/2 cups old fashioned oats,
3/4 cup pumpkin seeds,
2 Tablespoons light brown sugar,
2 teaspoons cinnamon,
1 teaspoon pumpkin pie spice
In a separate bowl combine pumpkin puree, oil, maple syrup and vanilla. Mix until well combined.
1/2 cup pumpkin puree,
1/2 cup oil,
1/2 cup maple syrup,
1/2 teaspoon vanilla extract
Pour mixture over the oats, and stir until everything is evenly coated.
Spread onto baking sheet.
Bake for 45 minutes, stirring every 15 minutes.
Remove from the oven and let it cool completely.
Once cool mix in dried cranberries.
1/2 cup dried cranberries
Store in an air tight container.
