Beef Stroganoff was always a favorite of mine growing up. My mom always made it with strips of steak (I have no idea what cut she used) and tons of mushrooms. We served it over rice and that rich sauce was so delicious. I can’t figure out why, but it has never been one of my husband’s favorites. So I almost NEVER make it. I am talking, I think I have made it two or three times in the 14 years we have been married. So I decided to try to compromise with this beef stroganoff ravioli skillet, because he is a big fan of ravioli.

Side dishes are hard. I always struggle to come up with side dish ideas. That is probably why I make so many one pot skillet meals, everything is all there for you, no side dish required. One of my favorite side dishes though is mushrooms. Especially when serving a cut of meat. Grilled steak with mushrooms… the best! Chicken with mushrooms… hello, chicken marsala is my favorite. Pork chops with mushrooms is better than pork chops with apples in my opinion!

I am so glad the weekend is finally here.  This was one of the slowest weeks ever!  Tomorrow is actually the state competition for my son’s Lego Robotics team.  So we will spend the day keeping 7 4th graders on track, and competing.  The boys are excited and as ready as they are going to get.  Only the top two teams move on, and given this is their first year, they know this is the last meeting of the season. Hopefully that means they won’t be nearly as nervous and will be more relaxed than the competition in November.

Stuffed Mushrooms

Did everyone have a good Christmas?  We did.  It was just the 3 of us, so it was a little quiet, which was kind of nice.  Santa came and spoiled our 7 year old, we had a great ham dinner, and it even snowed over night so we could have a White Christmas.  Couldn’t as for a much better day.  Oh, plus I got a blender!!  Bring on the smoothies.

Now that Christmas is over, it is time to get ready for New Years.  What do you guys do for New Years?  We often times go out for dinner on New Years Eve, and then watch football all day on the 1st.  The 1st is also my birthday, so the boys are forced to take a break for cake and presents.  This year my parents will be here, and I think we are going to have snacks and appetizers for grazing through the day.  So that is what I am sharing this week.

Today is stuffed mushrooms, one of my favorites.  I have been making this version for years.  My husband doesn’t like mushrooms, so I don’t get them often, but when I do I eat more than my fair share.  I fill them with a sausage mixture, but you could change that to crab pretty easily if you wanted to get fancy :)  These are super easy to throw together.  You can make them a few hours ahead of time, and then just heat them up for a party.  Plus they reheat fairly well too.
