Homemade Granola with Pumpkin Seeds, Honey & Cranberries – homemade crunchy granola made with honey, brown sugar, pecans, pumpkin seeds, cranberries and chocolate chips.  Breakfast just got a whole lot better!

Once you make your own granola at home, you will never go back. There is something about homemade granola that is just so good! And really it is super easy to make. You do have to stir every so often, but it really takes just 5 minute of work.

What do you eat for breakfast during the week?  Breakfast is really not my favorite meal, so I need a few staples that I can rotate between. Peanut Butter Protein Bars and Blender Muffins are two favorites. And yogurt with crunchy granola on top is another staple in my life.

Homemade granola is so nice because you really can mix it up however you want! This has pumpkin seeds, pecans and dried cranberries for a hint of sweetness. You can add in the chocolate chips or leave them out. Lots of ways to make it your own.

What You’ll Need

  • Old Fashioned Oats
  • Pumpkin Seeds
  • Pecans
  • Dried Cranberries
  • Chocolate Chips
  • Honey
  • Vegetable Oil– can really use any oil or butter that you like
  • Light Brown Sugar
  • Cinnamon
  • Vanilla Extract

How To Make Homemade Granola

  1. In a large bowl combine oats, pumpkin seeds, and pecans. 
  2. In a small bowl mix together honey, oil, brown sugar, cinnamon and vanilla.  Whisk until well combined.  Pour over oat mixture, stirring until well coated.
  3. Pour onto a baking sheet.  Bake for 1 hour, stirring every 20 minutes.
  4. Remove from the oven and let cool completely, stirring every 20 minutes so mixture does not clump together.
  5. Once cool, mix in dried cranberries and chocolate chips.

Recipe Tips & Variations

  • You will want to stir while it is baking and as it cools, this ensures that it gets evenly crispy and you don’t get soggy clumps or clumps with no flavor.
  • Get creative! You really can mix in whatever you like. Mix up the nuts, use raisins or other dried fruit, use white chocolate. Mix up the extract for an almond flavor. Really anything you like goes!
  • Granola lasts a long time, just store in an airtight container and you can have it on hand at all times!

How To Serve

In our house granola is one of those things you can just snack on or you can turn it into a meal. Serve over yogurt with fresh berries (my personal favorite), you can top with milk like traditional cereal. You can even use as a topping for ice cream!
