These Peppermint Sandwich Cookies are like a Homemade Oreo cookie with a peppermint cream filling. Chocolate-y, creamy, peppermint-y, and delicious!
I am a sucker for Oreo cookies. Pretty much every other store bought cookie I can pass on, but Oreos will get my every time. And I love all the different flavors. But a homemade one….that is something special and something everyone can agree on!

These are a dark chocolate cookie that a little soft and a little crunchy, and the homemade peppermint filling is the perfect pairing. If you like chocolate and peppermint don’t miss my Homemade Peppermint Patties or my Chocolate Peppermint Cheesecake for a decadent treat!

- All-Purpose Flour
- Unsweetened Cocoa Powder
- Granulated Sugar
- Brown Sugar
- Salt
- Baking Soda
- Butter
- Egg
- Vanilla Extract
- Peppermint Extract
- Powdered Sugar
- Milk
These sandwich cookies are seriously easy to make, because the food processor does all the work! Traditionally when you make cookies you use a mixer, but this makes almost a shortbread like cookie, so you are cutting the butter into the sugar and flour instead of creaming it like other cookies..
Recipe Tips
- Let the dough chill. It calls for 60 minutes, but that is a minimum for it to set up enough that you can slice disks. You can let it set up overnight if you want to make them ahead and do them in stages.
- The cookies will spread just a little when you bake them, so make sure your disks are pretty much the size you want your cookies to me.
- Not a fan of peppermint? Use any extract you like to flavor the filling.
- Make sure the cookies are completely cooled before you add the filling. If the cookies are warm, they will likely bread when you press down on the filling, and the filling will melt and make a mess.

Peppermint Sandwich Cookies
Ingredients
Cookie
- 1/2 cup granulated sugar
- 1/4 cup brown sugar
- 1 1/2 cups all-purpose flour
- 3/4 cup unsweetened cocoa powder
- 1/2 teaspoon baking soda
- 1 teaspoon salt
- 3/4 cup butter, softened and cut into small pieces
- 1 large egg
- 1 teaspoon vanilla extract
Filling
- 1/3 cup butter, softened
- 1 teaspoon vanilla extract
- 1/2 teaspoon peppermint extract
- 1/4 teaspoon salt
- 2 cups powdered sugar
- 1-2 Tablespoons milk or heavy cream
Instructions
- In a food processor mix together sugar, brown sugar, flour, cocoa, baking soda and salt. Add the butter a few pieces at a time, with the motor running. Pulse to incorporate. Add the egg and vanilla. Pulse until the dough starts to form.
- Turn the dough onto a clean surface. Form into a log/rope that is about 1 1/2 inches in diameter. Wrap in plastic wrap, and let chill in the refrigerator for 60 minutes.
- Preheat oven to 350° F.
- Remove dough from the fridge and remove plastic wrap. Using a sharp knife, slice dough about 1/4 inch thick. Place dough on a lined baking sheet about 2 inches apart.
- Bake for 12-15 minutes until set and cookies look dry. Remove from the oven and cool completely.
- Meanwhile, prepare the filling.
- To prepare the filling beat together butter, vanilla, peppermint and salt until fluffy. Add sugar and beat until fully incorporated. Add milk 1 Tablespoon at a time and beat until the desired consistency.
- Spoon or pipe filling into the center of a cookie. Top with another cookie, pressing down gently to spread the filling to the edge.
