Watermelon Cupcakes

These Watermelon Cupcakes are such a fun treat for summer! They have a bright green, white cake flavored base, topped with a pink watermelon flavored frosting. They will be a hit for any get together all summer long.

Summer is all about entertaining and get togethers with friends and family. And what better way to treat to bring than these super fun and tasty watermelon cupcakes? These delightful treats are the perfect combination of sweet and fruity, with a moist and fluffy texture that will have your taste buds dancing with joy. Not only are they delicious, but they also make for a stunning presentation with their bright pink frosting and mini chocolate chips for seeds on top.

These start with a box cake mix, but if you have a favorite homemade recipe you can definitely use it. Summer is busy, so I am all about making things easy, but still fun and impressive! These Watermelon Rice Krispie Treats are another fun treat you are going to love.

What You’ll Need

  • White Cake Mix – any brand that you like will work great.
  • Eggs – you use the amount called for on your box mix
  • Oil – you use the amount called for on your box mix
  • Water – you use the amount called for on your box mix
  • Butter
  • Powdered Sugar
  • Watermelon Kool Aid or Jello – this flavors the frosting
  • Milk
  • Red and Green Food Coloring
  • Mini Chocolate Chips

How To Make Watermelon Cupcakes

  • Make Cupcakes. Start by preheating your oven and follow the instructions on the box for your cupcakes. Just add in green food coloring and get it a nice bright green color. Bake until they are cooked through, and then let them cool completely before frosting.
  • Make Frosting. If you can find the packets of unsweetened Kool-Aid, you will use the full packet, or about 1 Tablespoon of watermelon Jello mix is what you need. Beat together with butter, powdered sugar and a little milk until you get a light and fluffy frosting. Add enough red food coloring and beat to a bright pink color.
  • Frost Cupcakes. I like to fill a piping bag, using a Wilton Star Tip, and pipe swirls of frosting over each cupcakes. Sprinkle on chocolate chips to look like seeds.

Kool-Aid or Jello

If you can find the unsweetened packets of Watermelon Jello that is my first choice when making this frosting. It doesn’t add any extra sweetness, and is the perfect amount. Oddly enough if does not add that much color to the frosting, so you will need more red food coloring. Kool-Aid packets, especially watermelon, can be hard to find though.

Watermelon Jello is a great alternative. You only need 1 Tablespoon of the mix, and it is already sweetened, so you may need a little less powdered sugar. The positive for jello is it adds a fair amount of color to the frosting, so you don’t need nearly as much added food coloring.

What kind of food coloring do you use?

I like the Betty Crocker Gel Food Coloring that you can find at almost any grocery store or even Amazon carries it.

Do I have to use Kool-Aid or Jello

No, you can just have a white cake with a traditional buttercream flavor that is decorated like a watermelon, but doesn’t taste like one. That is perfectly fine, I just thought it was fun to have it taste kind of like it looked! So if you can’t find either product, don’t worry!

How do I store cupcakes?

Store cupcakes in an airtight container at room temperature. They should last for 4-5 days.

Watermelon Cucpakes

Total Time 45 minutes

Ingredients

  • 1 (15.25 oz) white cake mix (and ingredients called for on the box)
  • Green food coloring

Frosting

  • 1/2 cup unsalted butter, softened
  • 1 Tablespoon Watermelon Jello Mix (or 1 packet unsweetened watermelon Kool-Aid)
  • 3-4 cups powdered sugar
  • 1/4 cup milk
  • Red food coloring
  • 2 Tablespoons mini chocolate chips

Instructions

  1. Preheat oven to 350º F. Place paper liners into 24 muffin cups. Set aside
  2. Follow the directions on the box to make cupcakes. Add green food coloring and mix until an even bright green color.
  3. Fill the paper liners about half full, and bake for 17-20 minutes, until they spring back when gently pressed and a tester comes out mostly clean.
  4. Remove from the oven and let cool for 10 minutes before removing to a wire rack to cool completely.
  5. To make the frosting beat together butter, 1 Tablespoon of jello mix or 1 packet of Kool-Aid with powdered sugar and milk. You may need to adjust the sugar and milk amounts to get a nice spreadable frosting. Add in food coloring to get a nice pink color.
  6. Fill a piping bag, using a Wilton Star Tip, and pipe swirls of frosting over each cupcakes. Sprinkle on chocolate chips to look like seeds.

Notes

If your frosting is too thick add a little more milk. If you frosting is too thin add more powdered sugar
