Creamy Cajun Chicken Pasta – Get dinner on the table fast with this creamy pasta full of spicy creole seasoning, tomatoes, and chicken!
The other night my son said to me I think that Cajun seasoning is my new favorite spice blend. Anytime he sees the jar out, he is excited for dinner. One Pot Cajun Pasta is one of his most requested dinners lately. He is really to plan a trip to Louisiana so he can experience more.
In the mean time, I am loving adding it to everything. My family likes things spicy, so we usually go on the generous side with it. But you can keep it mild and still get the flavors by just cutting back on the amount you use. And this Cajun chicken pasta recipe is ready in minutes, so it is great for those busy weeknights.
I am pretty sure that everyone knows I am a fan of pasta by now. Tuscan Chicken Pasta is always a good idea in my book. There will never be a day where I give up carbs, because pasta is pretty much a food group to me! I am all for the whole wheat, added protein, better for you pastas. So that is what I use, and I will proudly keep serving pasta in our house every week. Although I am eyeing this Cajun Spiced Cauliflower Steak.
What is Cajun Chicken Pasta
It is a really easy recipe that combines pasta with pieces of chicken in a creamy sauce that is seasoned with creole seasoning and tomatoes. The chicken is tossed with creole seasoning before you brown it. Then you add in diced tomatoes, more seasoning, heavy cream and Parmesan cheese. It all simmers until everything is cooked and the sauce is thick. Then toss with pasta and it is done. Super easy and so good!
In the middle of winter when fresh tomatoes are not all that great, I like to use petite diced tomatoes from a can. They are fresh tasting and work great in this recipe.
This Cajun pasta gets dinner on the table in just minutes. The sauce sauce cooks while the pasta boils, so it is all done about the same time. You can not ask for easier than that! And if you like things spicy you can use even more creole seasoning.
How to Make Cajun Chicken Pasta Healthy
The recipe calls for a half cup of heavy cream. This definitely gives it the super creamy texture and rich flavor. Plus you use butter and olive oil to brown the chicken in. To cut back on calories and fat use the following substitutions:
- Use 2 tsp olive oil
- Use 1 tsp butter
- Mix together 1/2 cup half and half with 2 tsp flour in place of heavy cream
- You could also use 2% milk or whole milk if you wanted.

Creamy Cajun Pasta
Creamy Cajun Chicken Pasta - Get dinner on the table fast with this creamy pasta full of spicy creole seasoning, tomatoes, and chicken!
Ingredients
- 8 ounces boneless skinless chicken breast, cut into small pieces
- 1 Tbls olive oil
- 1 Tbls butter
- 1/4 cup onion, minced
- 2 garlic cloves, minced
- 1 Tbls Creole seasoning
- 1 cup tomatoes, diced
- 1/2 cup heavy cream
- 2 Tbls Parmesan cheese
- 8 oz Spaghetti
Instructions
- Cook pasta according to package directions.
- Heat a large skillet over medium high heat. Add olive oil and butter, swirl to coat the pan.
- Toss chicken with 1 tsp creole seasoning.
- Add chicken and onions to the hot pan. Cook for 5-6 minutes until the chicken is browned and the onions are soft
- Add garlic and cook for 1 minutes
- Stir in tomatoes, heavy cream, Parmesan cheese and remaining 2 tsp creole seasoning. Bring to a boil, reduce heat and simmer for 2-3 minutes until the chicken is cooked and the sauce starts to thicken.
- Add pasta and toss to combine.
- Serve immediately.
Notes
You can use canned diced tomatoes if fresh tomatoes are not in season.
