The holidays are here and that means that life is just kind of crazy!  There are a million things on my to do list. Everything from shopping for gifts, holiday parties, school events, cookie exchanges and everything else in between.  Every year I swear I am going to be more organized and make the next year easier!

It is just so hard to keep up with so much going on. But today I have a little bit of a trick for you.  Something that can make life just a little bit simpler and take something off your plate. Breakfast….getting the kids out the door, you to work and everything else you have to do in the morning is hard right?  Well these sausage breakfast sandwiches are the perfect make ahead breakfast to make your life easy!

I have been making these freezer breakfast sandwiches for years to help with busy mornings.  I use Jimmy Dean® Fully Cooked Pork Sausage Patties that I pick up at my local Albertsons banner store to help make them super simple to put together.  I love that it is the same fresh, high-quality pork sausage that I know and love about Jimmy Dean already, just in these little patties!

I like to actually set up an assembly line,  stack everything and then wrap them up tight. These freezer breakfast sandwiches are great to get the kids involved. My son loves to help stack and wrap everything. It makes the process go even faster!  And because the sausage patties are fully cooked, it really cuts down on the amount of work you have to do.  The only thing you have to do is bake the eggs, and then just assemble!

After some trial and error over the years I have found the best way to make this breakfast sandwich recipe is to bake the eggs. Depending on how many I am making, that will determine the size of the pan I am using.  To make 8 sandwiches I like to use a 10×7 inch baking dish.  That is the one that fits inside the 9×13 inch pan. If you don’t have that, the bigger pan will be fine, your eggs will just be a little bit bigger on the sandwich.

You could even add cheese to the eggs when they are baking and skip the slice of cheese if you wanted, that would definitely work.  Or you could mix up the cheese. My family likes the flavor of cheddar with the sausage patties, but you can use whatever your family likes!  Wrap each sandwich with a small piece of paper towel, this helps to absorb any moisture when reheating and make sure things don’t get soggy.

Sausage Breakfast Sandwich - These sausage egg and cheese breakfast sandwich is super easy to make ahead and have stashed in your freezer for those busy mornings.

Cook Time 20 minutes
Total Time 30 minutes

Ingredients

  • 8 Jimmy Dean® Fully Cooked Pork Sausage Patties
  • 8 English Muffins, toasted
  • 8 slices Cheddar Cheese
  • 8 eggs
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. Preheat oven to 350 degrees.
  2. Beat eggs in a bowl. Season with salt and pepper.  Spray a 10x7 inch baking dish with non-stick spray.  Pour in eggs. Bake for 16-18 minutes until fully cooked.
  3. Remove eggs from oven and cut into 8 squares.  
  4. On the bottom of an English muffin place a slice of cheese, an egg square, and a sausage patty. Place the other half of the English muffin on the top. 
  5. To wrap place sandwich on 1/2 sheet of paper towel and wrap it around. Wrap tightly with plastic wrap. Place all 8 wrapped sandwiches in a freezer bag.
  6. To make - remove a sandwich from the freezer and remove the plastic wrap.  Put on a microwave safe plate and heat for 1 minute. Flip and heat for 45 seconds.  Remove from microwave, sandwich will be hot.  Serve immediately.

I'm all for easy make ahead meals for busy days! We love those sausages too, so I need to make a batch of these sandwiches for the kids to grab and go with!
