It is warming up around here, and it really is spring. Flowers are blooming, the grass is getting green, and you don’t have to wear a jacket every time you go out. I love this season. It isn’t crazy hot, so you can actually enjoy being outside. This last weekend we broke out our smoker and smoked our first brisket. The smell of the coals and the wood burning make me want to break out the marshmallows and make s’mores! Instead we waited 12 hours and had an amazing beef brisket! I can’t wait for more spring and summer!
All summer long, pretty much every day, my husband and son ask if it shake night. I think we have shake night maybe twice a summer, but they ask every day. And what do they have on shake night. Strawberry Milkshakes. EVERY. TIME. They never waiver. I turned their favorite into a pie!! Strawberry Milkshake Pie is their new favorite. I think what does it for them is the crust. The crust is made of waffle cones! Yes, waffles cones!! How fun is that?!
This Strawberry Milkshake Pie is so easy to make. There are a few steps involved, but they are super easy! You start by slicing the strawberries and mixing them with sugar. They get super sweet and juicy, and this is what give the milkshake pie all its flavor. Crust up waffles cones and mix with butter and sugar to make the crust. It doesn’t bake, just sits in the fridge until you are ready. Then just blend the strawberries with ice cream and milk. Pour into the crust and freeze. Seriously, that easy! You can have this in your freezer waiting for you on shake night. I topped with some whipped cream to serve, because why not?

Ingredients
Filling
- 1 pound fresh strawberries, hulled and sliced
- 1/4 cup granulated sugar
- 1 quart vanilla ice cream
- 1/2 cup milk
Waffle Cone Crust
- 8 waffle cones
- 5 tablespoons unsalted butter, melted
- 1/4 cup granulated sugar
Instructions
- In a bowl, mix sliced strawberries with 1/4 cup sugar. Let marinate for about 30 minutes, until they are nice and juicy.
- Meanwhile prepare crust. Using a blender or food processor, process waffle cones until they are crumbs. Mix in melted butter and sugar until the consistency of wet sand. Pour and press evenly into a pie plate. Refrigerate until ready to use.
- Once strawberries are juicy, blend together ice cream, milk and strawberries until smooth. Pour into prepared crust and place in freezer for 4 hours, or until set.
- To serve, let pie thaw for 10 minutes before slicing. Top with whipped cream if desired.
