What an absolutely gorgeous weekend!  We had weather in the 70’s on Saturday and 80’s on Sunday.  We got lots of yard work done and enjoyed some time outside.  My 8 year old had a scrimmage flag football game on Sunday afternoon.  His team of 1st & 2nd graders played a team of 3rd & 4th graders, and won!  They were pretty excited, hopefully they can keep it up for their real game tonight!

Cinco de Mayo is right around the corner.  Are you ready?  Do you do anything fun to celebrate?  Well I have lots of great recipes this week to help you get ready.  Last week I shared with you Baked Chicken Taquitos, today a great salsa to dip them in.  Or to just eat with some chips, that is completely up to you!

Teedo’s Famous Salsa comes from The Picky Palate Cookbook by Jenny Flake of Picky Palate.  The recipe comes from her Dad, and has a secret ingredient.  Avocados!  They make for a creamy and better than restaurant salsa.  It starts with canned tomatoes, so you can make this year round.  I made a double batch of this salsa.  I shared it at cooking club, and a party; everyone loved it!  Definitely something I will be making lots over the summer.

Teedo's Famous Salsa

A better than restaurant salsa with a secret ingredients....Avocados

Prep Time 5 minutes
Total Time 5 minutes

Ingredients

  • 1 (14.5oz) can diced tomatoes
  • 1 (10 oz) can diced tomatoes with green chilies
  • 2 small avocados , mashed
  • 1/2 cup cilantro , chopped
  • 1 clove garlic , minced
  • 1/2 lime , juiced
  • 1/4 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. Combine all the ingredients in a food processor. Pulse until blended, but not pureed.
  2. Store in an air tight container in the fridge for up to 2 weeks.

  3. So, that’s how you make salsa?! So easy. I had no idea. I’m not much a salsa eater, picky me, but it’s good to know that I can whip some up quickly for a party!
