Key Lime Pie Ice Box Cake – Everything you love about a sweet, tart, creamy key lime pie in a no bake ice box cake!

I live for no bake desserts in the summer. I have said that before, and shared a TON of different recipes here on the blog over the years. No Bake Kool-Aid Pie might be my son’s favorite. He can even make that one himself. No Bake Oreo Cheesecake might be more my speed though.

My husband’s all time favorite pie is key lime pie. But sometimes you just don’t want to turn on the oven. Even if the pie is only 3 ingredients and super easy to make. So why not an ice box cake?

Strawberry Cheesecake Lasagna was such a big hit earlier this summer, I used that as the base for this key lime pie ice box cake. Have you ever made an ice box cake before? It is a layered dessert that uses graham crackers as the “cake” portion. The creamy layers soften the graham crackers, so it cuts and tastes like you are eating cake!

We have had a crazy hot summer here, so I am avoiding my oven at all costs. This key lime pie ice box cake is super refreshing, creamy, and the perfect thing to beat the heat. I served this to a couple different groups of friends, and everyone raved about it. If you know anyone who likes key lime pie, you have to make this for them. They will be so impressed!

My husband doesn’t always love an ice box cake. I can’t figure out why, they just aren’t his favorite. But I completely won him over with this one. There was enough key lime flavor, which he often thinks key lime desserts are lacking. Plus the homemade whipped cream. It was enough to convert him!

Key Lime Ice Box Cake

All the flavor of a cool and creamy key lime pie in an easy no-bake icebox cake. It's a foolproof summer dessert that won't heat up the kitchen. 

Prep Time 20 minutes
Additional Time 4 hours
Total Time 4 hours 20 minutes

Ingredients

  • 2 (8 oz) packages cream cheese, softened
  • 3/4 cup powdered sugar
  • 1/2 cup key lime juice
  • 2 cups heavy cream
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 box graham crackers

Topping

  • 1 cup heavy cream
  • 1/4 cup powdered sugar
  • 1/2 teaspoon vanilla extract
  • Zest of 2 limes
  • Lime wedges, for garnish

Instructions

  1. Using an electric mixer, beat cream cheese and 3/4 cup sugar together until smooth and creamy. Beat in key lime juice until smooth. Pour into a separate bowl and set aside.
  2. Whip heavy cream, using the whisk attachment of a mixer, until it becomes soft peaks. Add powdered sugar and vanilla. Whip until stiff peaks.
  3. Fold whipped cream into cream cheese mixture.
  4. Place a single layer of graham crackers into the bottom of a 13x9-inch baking dish. Spread 1/2 of whipped cream mixture over crackers. Repeat with another layer of crackers and remaining cream. Top with 1 more layer of crackers.
  5. Prepare topping by whipping heavy cream, using the whisk attachment of a mixer, until it becomes soft peaks. Add powdered sugar and vanilla. Whip until stiff peaks.
  6. Spread topping over top layer of crackers. Sprinkle lime zest over cream.
  7. Place in refrigerator for 4-5 hours before serving.
  8. Garnish with lime wedges to serve.
