This is kind of a crazy time of year. Everyone is busy with holiday parties, cookie exchanges, friends and family, plus work and school seems to be busier as well. Everyone is trying to get everything done before the new year and the Christmas gets here. So we are all stressed with a to do list a mile long, and not enough time to get it all done.

One of these years I am going to just say no to it all, and take my time and not worry about all the pressures.  I still haven’t even thought about our Christmas cards this year. This may be the year they don’t go out. And I am going to be ok with that. But until the time I just take the month of December off from the world, I am going to rely on a few shortcuts to help make the holidays easier.

In our family creamy chocolate fudge is a must every year. But it can be stressful dealing the the candy thermometer and worrying about getting the sugar and butter to just the right stage. So I used my friend Sandra’s method. She made a Chocolate Toffee Fudge in the microwave and it tasted amazing. I took my normal Chocolate Fudge recipe, and tried it out.

The results of this easy microwave fudge? Rich, creamy, and delicious. It tastes just like my normal fudge, as it should since I used the same ingredients. But it was so much easier! I didn’t have to stand over the stove stirring, and stressed I was going to mess it up. This microwave fudge is the fool-proof way to make fudge this season.

Normally we just make plain chocolate fudge at my house. But you could stir in some chopped walnuts before you poured it into the pan if you wanted. I sprinkled some chopped Andes mint candies on top to give it a little something special.

Easy Microwave Fudge - creamy fudge is always a hit around the holidays. Make it in the microwave in 15 minutes with this fool-proof, stress free recipe.

Prep Time 5 minutes
Cook Time 10 minutes
Total Time 15 minutes

Ingredients

  • 3/4 cup unsalted butter
  • 3 cup granulated sugar
  • 2/3 cup evaporated milk
  • 1 (12 oz) bag semi-sweet chocolate chips
  • 1 (7 oz) container marshmallow fluff
  • 1 teaspoon vanilla extract
  • 1 cup chopped Andes mints, (optional)

Instructions

  1. Line a 9x13 pan with parchment paper or grease and set aside.
  2. In a large microwave safe bowl melt butter.
  3. Stir in sugar and evaporated milk. Heat for 3 minutes.
  4. Stir well, and heat for an additional 2 minutes.
  5. Scrape down the sides and heat for another 3 more minutes.
  6. Stir well, and heat once more for 2 minutes.
  7. Remove from the microwave and stir in marshmallow fluff, chocolate chips and vanilla. Pour into prepared pan.
  8. Let cool for 10 minutes and sprinkle with Andes mints if using.
