A fun and addicting snack mix perfect for St. Patrick’s Day. This Leprechaun Bait is ready in minutes and will quickly become a favorite!

When I was a kid we didn’t really celebrate St. Patrick’s Day in any way at all. We didn’t have Corned Beef for dinner, we didn’t make Lucky Charms Krispie Treats, it was just another day in our house. Then I had a son who went to elementary school and all that changed. He wanted all the fun treats and food and stuff kids do. So this Leprechaun Bait came to be, and has been a staple ever since!

This is a take on the classic snack mix, Patriotic Party Mix or it is often made at Christmas and called Christmas Crack or many other names.

Why You’ll Love This Leprechaun Bait

  • Easy – If you have 10 minutes you can make this. Melting the chocolate is the hardest party!
  • Fun – Lucky Charms marshmallows just make this fun and a creative treat.
  • Versatile – mix up what you add from the cereal to the candy you can use anything you like!
  • Addicting – The sweet and salty combo is just hard to stay away from!

What You’ll Need

  • Chex Cereal – Any flavor you like or even any cereal will work. Crispix is another great choice.
  • Lucky Charms
  • Pretzels
  • White Chocolate – I like to use the white almond bark because it melts very quickly and smooth
  • Green M&M’s – you can use the Mint M&M’s if you can find them
  • Lucky Charms Marshmallows – they sell Just the Marshmallows or just pick up 1/2 cup from the rest of the box

How To Make Leprechaun Bait

  • Melt – In a microwave safe bowl heat the almond bark or white chocolate for 1 minute. Stir and heat for an additional 20 seconds. Stir until smooth.
  • Mix – In a large bowl mix together the cereal, pretzels and half of the M&M’s. Pour over the melted chocolate and mix until everything is well coated.
  • Set Up – Pour the mixture onto a baking sheet and sprinkle over the M&M’s and marshmallows. I like to do this so they stick as the chocolate hardens, but you can still see them and they aren’t just covered in white chocolate. Let the mixture set up for 1-2 hours and then break into pieces.

Storing Leprechaun Bait

This will last a couple days if you store it in an airtight container. No need to refrigerate, just store at room temperature.

Freezing – this is one of those that does hold up to the freezer. You can store in an airtight container for up to 3 months.

Recipe Tips & Variations

  • I like to use almond bark or the white chocolate bars that are meant for melting. I think they melt easier and much smoother.
  • Get creative with your mix-ins! I used Crispix cereal and Cheerios, but you really can use anything you like. Any variety of Chex cereal, Captn’ Crunch, Life cereal, Golden Grahams etc. Whatever you have, whatever flavor you like works great!
  • Sweet & Salty is a great combo you can play up even more. Add peanuts or oyster crackers to the mix for an even saltier twist.
  • Add festive green sprinkles to the mix after you spread it onto the baking sheet or an even bigger pop or green and St. Patrick’s Day.

Leprechaun Bait

Ingredients 

  • 3 cups Chex cereal
  • 1 cup pretzel sticks
  • 1 1/2 cups Lucky Charms cereal
  • 2/3 cup green M&M’s
  • 1/2 cup Lucky Charms Marshmallows, just extra out from the box
  • 8 oz white chocolate almond bark

Instructions 

  • Add the chocolate to a large microwave safe bowl. Heat for 1 minute, stir well and heat on 20 second intervals until the chocolate is completely melted and smooth.
  • In a large bowl add Chex cereal, pretzels, Lucky Charms cereal and about 1/2 of the M&M's.
  • Pour melted chocolate over and mix together until everything is well coated.
  • Pour onto a baking sheet and spread into a single layer.
  • Sprinkle the M&M's and marshmallows over the top. Let the mixture set up for 1 hour.
  • After the chocolate is set, break into pieces to serve.

Notes

You can buys Just The Marshmallows in some stores or just pick out 1/2 cup of extra marshmallows from the box of cereal.
