This Reuben Dip has all the flavors of a classic Reuben Sandwich in a fun and easy dip that you can make for any get together!

If you like a Reuben Sandwich you are going to love this dip. It is a fun twist, and a way to enjoy those flavors more often! I am not going to lie, I love Corned Beef, so having an excuse to eat it more often is fine by me! The best thing about this recipe though, is you can make it with corned beef from the deli, so you don’t have to worry about making a whole roast if you don’t want to.

But if you happen to have leftover Instant Pot Corned Beef, it would make this dip over the top amazing. Serve with toasted rye bread for dipping and you have a match made in heaven.

Why You’ll Love This Reuben Dip

  • Fast – this really comes together in no time. It is basically just mixing a few things together and then baking until it is hot. Alternatively you could put it in the crockpot, which would make it even easier!
  • Make Ahead – this is one of those dishes you can prep a day or two ahead. Mix together everything and then just cover in the fridge until you are ready to bake it. Great for parties.
  • Great for Leftovers – you can make this with deli corned beef, so it is perfect all year round. But if you have leftovers from your St. Patrick’s Day dinner, this is a great use for them!

What You’ll Need

  • Cream Cheese
  • Corned Beef
  • Swiss Cheese
  • Mayo
  • Thousand Island Dressing
  • Sauerkraut – the canned stuff works fine, just make sure to not get any of the extra liquid.

Yes, a Reuben Sandwich is technically made with Russian Dressing. If you have that on hand, by all means use it! But Thousand Island is so darn similar, and something people tend to have on hand. So I wanted to make this recipe easy, simple, and not intimidating. And if you don’t have either, try whipping up my Homemade Thousand Island Dressing for this!

How To Make Reuben Dip

  • Mix. In a large bowl blend together all of the ingredients until they are well combined and evenly blended.
  • Bake. Pour mixture into a pie plate, or small baking dish. Bake for 20-25 minutes until it is hot and bubbly.

Recipe Tips & Suggestions

  • This is great to make ahead. You can mix the dip together, place in baking dish, and then cover in the fridge for 2 days before you want to bake it.
  • Use the crockpot. If you are serving this for a party, instead of baking, you can pour the dip into your crockpot and cook on low for a couple of hours. Then switch it to warm to keep it hot for your get together.
  • If you have Russian Dressing you are welcome to use it! I know it is the traditional dressing on a Reuben, but it can be harder to find, so I called for Thousand Island in this recipe.
  • If you can’t find corned beef at your deli counter you can use pastrami. They are different, even though they are both come from a beef brisket, pastrami is smoked, so it has a different flavor. But it will still work great in this dip.
  • This recipe makes enough for about 8 people, so if you are making for a large group you can easily just double and bake in a larger dish.

What Do You Use To Dip

This is where you can get creative! Really anything goes, it is just what you like.

  • Rye Bread – cut into small pieces and toast until crispy.
  • Rye Chips – if you can find rye chips (like the kind in Chex Mix) they make a great dipper
  • Tortilla Chips
  • Crackers

Storage

If you have leftover dip you can keep it in an airtight container in the fridge for 3-4 days. Depending on how much you have left, you can reheat in the microwave or in the oven until it is warmed through.

Ingredients 

  • 8 oz cream cheese
  • 1/2 pound deli corned beef, chopped
  • 8 oz Swiss cheese, shredded
  • 1 cup sauerkraut, drained
  • 1/2 cup Thousand Island Dressing
  • 2 Tablespoons mayo

Instructions 

  • Preheat oven to 350º F.
  • In a large bowl mix together all of the ingredients for the dip until well combined.
  • Spread into a pie plate or small baking dish
  • Bake for about 20 minutes until hot and bubbly.
  • Serve with rye chips or your favorite dipper
