What a weekend!  We spent Saturday in Denver, attending the State Lego Robotics competition.  Our boys did really well, for their first year.  Some of the teams there are just incredible to watch.  If you don’t know what Lego Robotics is, or what the kids are capable of, just look it up on You Tube, and you will find tons of videos.  So much fun to think about where our kids can go in the future.  Sunday was spent relaxing and watching football.  My husband and son are big Packer fans, so it was a stressful afternoon!

Slow Cooker Korean Beef Tacos {Dinners, Dishes, and Desserts}

After a super busy weekend, it is hard to be motivated to start the week.  It is times like these that I love using my crock pot to make dinner.  So little work on my part, with such a great reward at the end of the day.  These Slow Cooker Korean Beef Tacos are no exception.  Five minutes worth of work in the morning, and then just 10 minutes to get the toppings ready and shred the meat at dinner time.  You really can’t get much easier than that!

Using the slow cooker makes the beef super tender.  Super easy to shred and use for tacos.  I topped with a little Korean inspired coleslaw salad and Sriracha.  Kimchi would also make a great, more typical, topping for Korean Beef Tacos.  No matter how you top them, your family will love these.  The beef has so much great flavor!  If you have leftover beef, freeze it in some of the juice for a quick weeknight meal later in the month.

  6. I love the idea to use different kinds of meat in taco form. I mean it’s a form of a sandwich
    in a way. I loved fish tacos when I discovered them. But I just didn’t jump to ideas such as this one that as come to my attention in the last year. Most delicious.
