I can’t believe it is back to school time already! We went yesterday to get my son’s schedule, his locker, and register him for middle school. What an experience. I remember doing that with my parents!
Kind of surreal to be doing it with your own kid; having them figure out how to open their locker, and where to go for each period. He is going to do so well, but I am getting a little nervous for his first day. I think yesterday made him more excited though, so that is good!
Back to school is a busy time of year. Trying to get in that new routine, all of the activities starting up again, and just adjusting to homework and everything else. It can be stressful for both parents and kids. I like to have a few easy back to school recipes that I can rely on.

I have been making these slow cooker French dip sandwiches for years! I still have the print out, that is nicely stained at this point, that a good friend gave me about 10 years ago. I am not sure why I still use the recipe; it is 4 ingredients! Seriously, you can not get any easier. But it reminds me of her, so every time I made these sandwiches, I pull it out.
Unless I am feeding a crowd, this recipe makes way too much for our family of 3. But that is NOT a problem! I love to freeze the leftovers for a couple months, then I can thaw and reheat for an even easier dinner. My husband likes his topped with cheese, banana peppers, and sriracha. I like mine plain. So no matter how you like to top them, they will be a huge hit with your family!
