Who doesn’t love a good margarita? I have to say I think it is one of my favorite drinks. A girl’s night with chips, salsa, guacamole and margaritas is kind of my idea of perfection.

Sometimes I like a flavored margarita like strawberry or mango, other times, just a classic lime margarita on the rocks hits the spot. My Blue Margarita Recipe is seriously one of my favorites too.

Last week I had the privilege of going on Princess Cruises to cruise through the panama canal on board the Coral Princess. It was one of the most amazing experiences I have ever had. I will be sharing some pictures and a few more posts about the highlights over the next couple of months.

One thing there was no a shortage of on the ship was drinks. And pretty much any kind of drink you could think of. We tried specialty fun cocktails, fruity drinks, wine, mocktails and more. But the classic margarita was always a hit. The blue margarita that I showed off on Instagram might be a close second though.

After dinner a group of us would often go to the Explorer’s Lounge, which was a bar area with a dance floor. We would listen to music, watch karaoke, maybe sing karaoke (but there is no evidence, so it didn’t happen), and enjoy margaritas!

The bartender, Lan was one of our favorites.  He was fun to talk to and always remembered who we were, and was quick to take our order. Plus they had happy hour most nights, so if you went during that time you could get your 2nd drink for only $1. Seriously a deal. It was a great place to get together with our large group every night and hang out.

So now that I am back home and back to real life, I have to get my classic lime margarita fix somehow. So I came up with this version that I can make at home. It is tart, slightly sweet and very refreshing. Not quite the same as drinking it poolside in paradise. But my couch will just have to do, until next time. Because there will be a next time. I have to take my family to cruise through the Panama Canal, they will love it!

I like my lime margaritas a little bit on the sweet side, so I add simple syrup. You can definitely leave that out, or adjust the level for your preference. But trust me, a classic lime margarita should be on the menu this weekend! In case you missed it here is the fun blue margarita I will have to make next.

GREAT memories of a wonderful cruise!! Seems to me that there is evidence of those 4 minutes of karioker, or kariyaki, but I’ll make sure my daughter never makes it public! Miss you lost, Erin and can’t wait until we can be sipping Margaritas again!

I have nothing but the best memories of this cruise and I have some videos to prove just how much you and Lynne liked their drinks {just teasing}. But really Princess did the best job making sure all their guests were happy and we made new friends along the way.

It was so wonderful to finally meet you! You gave me lots of laughs while on the ship. ;-P I failed to have a margarita while aboard the Coral Princess but will certainly have to make yours!
