Dulce de Leche No Bake Cookies – Quick and easy chocolate and peanut butter no-bake cookies with a Dulce de Leche twist!

No bake dessert recipes are kind of a must in summer.  Turning on the oven can heat up the house, and a super decadent dessert can just feel to heavy with all the other fresh summer foods you are eating.  Don’t get me wrong, I would eat brownies any day of the week.  But when summer hits, I try to get my chocolate fix another way.  Traditional no bake cookies have been a staple in our house for years.  But this year I mixed them up a little!

Adding dulce de leche to just about anything takes it up a notch.  The stuff is incredible.  It is like a soft and gooey caramel that you can buy in a can.  At my stores you can find it with either the baking stuff, or with the Mexican and other ethnic foods.  You can even make your own, pretty easily with sweetened condensed milk.  Try this Homemade Dulce De Leche Caramel from Melissa’s Southern Style Kitchen. Once you try it, you will just be dreaming up things to use it in, it is so good!

These dulce de leche no bake cookies are just a fun little twist on the no bake cookies you know and love.  I used half the normal amount of peanut butter.  I wanted to eliminate the peanut butter entirely, but the cookies would not set up the 3 times I tried it.  So be weary if you want to play with the recipe.  But if you have never had peanut butter and caramel together you are missing out.  So I knew no matter what, these cookies would be amazing!

So, half the amount of normal peanut butter and a can of dulce de leche in the cookies.  Then once they cool, I topped them with even more dulce de leche!  Like a dream come true with gooey and deliciousness. And ready in just minutes without turning on the oven.

Dulce de Leche No Bake Cookies

Dulce de Leche No Bake Cookies – Quick and easy chocolate and peanut butter no-bake cookies with a Dulce de Leche twist! 
Prep: 5 minutes
Cook: 10 minutes
Servings: 36

Ingredients 

Instructions 

  • In a large sauce pan melt butter. Add sugar, cocoa powder and milk. Bring to a rolling boil and cook for 1 minute.
  • Remove from heat, add vanilla, peanut butter, and 1 can dulce de leche. Stir until smooth. Mix in oats.
  • Scoop rounded tablespoons full of batter onto lined cookie sheets. Allow to cool completely.
  • Spoon rounded teaspoons full of dulce de leche onto each cookie.
  • Store in an air tight container.

  2. No-bake is the bomb! And peanut butter and dulce de leche? Never tried it, but I’m licking my lips at the thought! Yum!
