Happy Easter! I hope you enjoyed a great day with family and friends yesterday celebrating. We had friends over for a delicious ham dinner. Now I have so much ham leftover, it is kind of crazy. Tonight we are having Ham & Cheese Tortellini for dinner. I will probably make ham fried rice one night, breakfast for dinner with either omelets, an egg scramble or some kind of ham and egg crescent bake. And then my Creamy Spring Gnocchi another night. Pretty sure I will still have plenty left. What are your favorite ways to use leftover ham?
