Pappardelle Pasta in Mushroom Sauce – a hearty thick cut pasta in a classic mushroom sauce. Inspired by Italy, made at home in under 30 minutes!

This summer we took a trip to Italy. It has been on my bucket list for a really long time. Not only did I want to see all of the historic places, experience the culture, and drink all the wine. I also wanted to really experience the food and cooking that make Italy what it is.

We visited a few different regions of Italy, and I was even able to take a cooking class while we were there! I learned to make homemade pasta by hand, using a 36 inch long wooden rolling pin. It was an amazing experience that I will never forget!

Today I am excited to partner with Classico pasta sauces to help bring Italian inspired dishes into your kitchen. When I was in Italy, one thing I noticed was most restaurants had a pasta dish with mushrooms on the menu. I absolutely love mushrooms, so it is safe to say that I ordered it often. Pasta dishes, like all dishes in Italy, used a few high quality ingredients, to really make the food shine.

This Pappardelle Pasta in Mushroom Sauce was inspired by Milan. In Milan, cultures blend and inspire the creation of inventive recipes. Here, fresh cream, aged Parmesan cheese, and red-ripe tomatoes are blended with a hint of vodka for a rich, unique flavor. Tomato and cream sauces are very common in Milan, so the Classico Vodka Sauce is a great option to get that flavor at home.

Classic mushroom sauces in Milan use porcini mushrooms. They are not as easy to find where I live, so I used a blend of shiitake mushrooms, portabellos, and white button mushrooms. You can use any mushrooms that you like and can find in your area. Combined with vodka sauce you get a rich and creamy sauce that pairs perfectly with pappardelle pasta.

I love that I can make this pappardelle pasta at home and feel like I am back in Italy. Add a glass of wine (not in a real wine glass, because that is how it is done in most restaurants in Italy) and I am more than happy! Dinner is ready in less than 30 minutes, so even on our busiest night we can have a comforting meal and escape from reality for a little bit. Pappardelle Pasta in Mushroom Sauce

Pappardelle Pasta in Mushroom Sauce - a hearty thick cut pasta in a classic mushroom sauce. Inspired by Italy, made at home in under 30 minutes!

Ingredients 

Instructions 

  • Bring a large pot of water to boil, and cook pappardelle pasta according to package directions.
  • Heat a large skillet over medium high heat. Add olive oil, swirling to coat. 
  • Add mushrooms and shallots. Cook for 4-5 minutes until the mushrooms start to brown.
  • Season with salt, pepper, and Italian seasoning. Add garlic and cook for 1 minute.
  • Pour pasta sauce over mushroom mixture. Simmer for 5-10 minutes. Add cooked pasta, tossing to coat.
  • Serve topped with shredded Parmesan cheese if desired.
