Do you have your kids do “school” work during the summer?  My son is really good at math and reading, and he likes both of them.  So we have him do some math each day, and he reads each day as well.  No matter what, he reads for awhile before bed each night, to help him calm down so he can go to sleep.  But the math, that is starting to prove to be a challenge.  He loves math, and during the school year he loves the website we have him working on.  But now… it is “boring”.  It is getting to be more of a struggle each day.  Who knew summer was supposed to be so entertaining 🙂

Chicken Taco Burgers {Dinners, Dishes, and Desserts}

The other day we were sitting around on a Saturday morning trying to plan our day.  I had to go to the store to pick up a few things for the outing we had on Sunday, so if we needed anything for lunch or dinner on Saturday, I wanted to pick it up all in one trip.  My husband decided on a lunch idea, and so my 9 year old and I were trying to come up with dinner.  I was craving Mexican, but it was too hot to do enchiladas or anything real involved.  My son suggested chicken burgers.  So I thought why not combine what we both want into one summer friendly meal.  Hence the chicken taco burger was born!

Whenever I make turkey or chicken burgers I like to grate in onion with the meat. It helps to keep the patty nice and moist, but it doesn’t add any flavor to it.  So even my son won’t complain.  These taco burgers were so darn easy, I almost feel bad giving you the recipe.  Aside from the onions, all I did was add some taco seasoning to the meat.  Then I topped the burgers with a couple of our favorite taco toppings; salsa and homemade guacamole.  I used pepper jack cheese on top, but cheddar would be great as well.  Seriously easy, good for you, and lots of taco flavor!

Chicken Taco Burgers - combine 2 favorites (tacos and burgers) into one summer time dinner!

Combine two of your favorites; taco and burgers into one quick, easy, and healthy dinner!

Prep Time 5 minutes
Cook Time 10 minutes
Total Time 15 minutes

Ingredients

Burgers

  • 1 pound ground chicken
  • 1/2 small white onion, , grated
  • 1 1/2 Tbls taco seasoning

Extras

  • 4 hamburger buns
  • 4 slices cheese, (pepper jack or cheddar)
  • guacamole
  • salsa
  • lettuce

Instructions

  1. Preheat grill to medium high heat.
  2. In a bowl mix together ground chicken, grated onion and taco seasoning. Mix until everything is well combined. Form into 4 equal sized patties.
  3. Place on grill, and cook for about 5 minutes per side, until cooked thru.
  4. During the last 2 minutes of cooking, place a slice of cheese on each patty to melt.
  5. Toast buns if desired.
  6. Serve topped with your favorite taco toppings such as salsa, guacamole, and lettuce.
