So we are back from vacation, and it is time for me to leave again.  That was 3 whole days at home, and I am headed to a conference that I have been planning for the last 5 months.  Seriously, did you know how much work goes into planning a conference?  If you ever have to go to one for work, just think about who had to put every part of that together.  This is a small conference for just 10 people too!  So many details.  I am so excited to get to spend the weekend with these ladies, to learn, eat, grow and improve my blog.  But I am so super excited that I can stop stressing!  So follow along on Instagram so you can see the food and the views (we are in the mountains of Breckenridge).

M&M Peanut Butter Bars {Dinners, Dishes, and Desserts}

I have a slight obsession with peanut butter M&M’s.  They can not be around me, I have absolutely no will power when it comes to them.  In a moment of weakness a couple weeks ago, I grabbed a bag at the store.  I figured I would come up with something to make with them.  Well, every single time I opened that drawer it took everything I had to not open the bag.  I finally had to make something fast, or the bag was going to disappear and my pants were going to have problems.  So, what goes best with peanut butter (aside from chocolate)?  More peanut butter, of course!  So M&M Peanut Butter Bars were made, and they were oh so good!!!

Basically I made a peanut butter blondies and added a bag of peanut butter M&M’s to the mix.  I did reserve some to press into the top of the batter before I baked them.  So they are super colorful and fun when you take them out of the oven!  These peanut butter bars are super thick, chewy and have tons of peanut butter flavor.  I had one warm, and the slightly melty M&M’s were pure heaven.  I sent these M&M Peanut Butter Bars into work with my husband, because apparently even in baked form, I have no will power.  Probably should have guessed that.  So trust me, and whip up (no mixer required, so super easy) a batch of these M&M Peanut Butter Bars right away!

M&M Peanut Butter Bars

Cook: 30 minutes
Total: 35 minutes

Ingredients 

Instructions 

  • Preheat oven to 350 degrees. Line an 8x8 inch baking dish with foil. Set aside.
  • Melt butter in a microwave safe mixing bowl. Stir in brown sugar and egg until very well blended. Mix in peanut butter until smooth. Stir in flour and vanilla. Fold in M&M's, reserving about 1/3 cup to sprinkle on the top.
  • Pour batter into prepared pan. Sprinkle with reserved M&M's.
  • Bake for 25-30 minutes, until a tester comes out mostly clean.
  • Cool before slicing to serve.
