Apple Cinnamon Muffins – a great easy muffin loaded with apples and plenty of cinnamon. They are topped with a cinnamon struesel topping and make for a delicious breakfast or brunch!

Muffins are one of my favorite things to have around the house. You can make them fit for the season like these, that are full of apples and cinnamon. Or you can make Strawberry Muffins that are perfect for summer. They are like dessert for breakfast all year round!

These apple muffins are super easy to make with pretty much whatever apples you have in the fridge. I like to use real chunks of apples when making muffins as opposed to apple sauce or apple cider. That way you get real apple flavor that you can identify and know what it is.

  • Cortland
  • Gala
  • Granny Smith
  • Honey Crisp

When it comes to baking in the fall, I think a cinnamon streusel should be on just about everything! This Pumpkin Coffee Cake is loaded with one and it takes it to a whole new level!

That crunchy buttery topping just takes these muffins up a notch and they will be requested over and over again!

Tips for Making Muffins

  • Do not over mix your batter. When a recipe calls for mixing the wet and dry ingredients separately you want to follow that. Over mixing will make your muffins tough and that is not what you want!
  • Use an ice cream scoop to fill your muffin tins. This ensures that you get the same amount of batter in each cup and makes sure you don’t have drips that get dried and caked on your muffin tin.
  • Do not over bake your muffins. This is similar to when you are making brownies or cookies. The muffins continue to cook in the hot pan when you take them out of the oven, so you want to cook them until they are just barely done in the oven or they will be dry when you eat them.
  • Use a toothpick to test when they are done. When you insert the toothpick you want just a few crumbs to come out with it. You don’t want any batter or they need more time, but you don’t want it completely clean either, or they are already over done.

How To Make Apple Cinnamon Muffins

  1. Start by mixing the flour, both sugars, baking powder, cinnamon and salt together in a large bowl.
  2. Using a liquid measuring cup measure the milk and oil. Then add in your egg and whisk until it is combined.
  3. Pour the milk mixture into the flour mixture and stir until it is just combined.
  4. Fold in your diced apples and then fill your muffin tins.
  5. Make your streusel topping by mixing together the sugars, cinnamon, flour and butter together with your fingers. Once you get a wet sand consistency sprinkle over the muffin cups.
  6. Bake for 15-18 minutes until a tester comes out mostly clean. Then let the muffins sit in the pan for 10 minutes before removing to a wire rack to cool completely.

Muffins are one of my favorite things to make because they freeze really well! So you can make a double batch and one they are completely cool place them in an air tight container in the freezer. They last for 2-3 months, so they are perfect for busy mornings.

Instructions 

  • Preheat oven to 350º F. Line a 12 cup muffin tin with liners.
  • In a large bowl mix together flour, both sugars, baking powder, cinnamon and salt.
  • Using a liquid measuring cup measure the milk and oil. Add in your egg and whisk until it is combined.
  • Pour the milk mixture into the flour mixture and stir until it is just combined.
  • Fold in your diced apples.
  • Divide batter equally among prepared muffin tin.
  • To make your streusel topping: Mix together the sugars, cinnamon, flour and butter together with your fingers. Once you get a wet sand consistency sprinkle over the muffin cups.
  • Bake for 15-18 minutes until a tester comes out mostly clean.
  • Remove muffins from the oven and let them cool in the pan for 10 minutes before removing to a wire rack to cool completely.
