Barbecue Salmon Bowls – Ready in 10 minutes and so easy!! Barbecue salmon over rice with corn, avocado, and a yummy sauce.

I say this all the time, but I hate lunch. Seriously, it is the worst meal of the day for me. I work from home, so you’d think lunch would be easy. But no, it is the exact opposite. I don’t want to go through a ton of work to make something just for one person. I want it to be healthy, but not take 30 minutes to make. Plus, I never think ahead to have any meat of any kind ready to put on a salad. It is a daily struggle for me. But I came up with an easy and fun recipe that comes together in minutes, is healthy, and great for a quick lunch.

My family loves fish, but I don’t make it nearly enough. I know how good it is for you, they recommend you eat it twice a week, so I am trying to get better at that! Ingredients 

Sauce

Instructions 

  • Heat rice according to package directions.
  • Pour into a bowl. Top with avocado and corn.
  • Empty salmon pouch into a small bowl, and heat for 45 seconds. Add to the top of the rice.
  • To make the sauce mix all of the ingredients together. Drizzle over the rice bowl.
  • Serve immediately.
