Barbecue Salmon Bowls – Ready in 10 minutes and so easy!! Barbecue salmon over rice with corn, avocado, and a yummy sauce.
I say this all the time, but I hate lunch. Seriously, it is the worst meal of the day for me. I work from home, so you’d think lunch would be easy. But no, it is the exact opposite. I don’t want to go through a ton of work to make something just for one person. I want it to be healthy, but not take 30 minutes to make. Plus, I never think ahead to have any meat of any kind ready to put on a salad. It is a daily struggle for me. But I came up with an easy and fun recipe that comes together in minutes, is healthy, and great for a quick lunch.
This post is brought to you by Chicken of the Sea and the maker of Minute® Rice.
My family loves fish, but I don’t make it nearly enough. I know how good it is for you, they recommend you eat it twice a week, so I am trying to get better at that! Did you know October 8th is National Salmon Day? Salmon seems to be one of the most common fish that people eat, and why not, really. It is so easy to make, and so versatile with the flavors you can add to it. Like these new flavor pouches from Chicken of the Sea: Lemon pepper, Sweet & Spicy, Barbecue, and Sriracha. They are so easy to just open and use. Great to just throw in your bag when you leave in the morning (no refrigeration needed), or grab out of the pantry for lunch (if you are like me). For someone who struggles with lunch daily, these can be a life saver. I get bored so quickly with the same meal every day, but the flavors help me mix it up and stay on track. These Barbecue Salmon Bowls come together in minutes, so I can take a short break for a healthy lunch, and not feel guilty.
This year Chicken of the Sea and the maker of Minute® Rice are joining forces to show you just how easy a healthy and delicious salmon meal can be. The new Minute® Ready to Serve Rice containers cook in just 1 minute, so they are perfect when you are in a hurry. Plus, you want to know one of my favorite things? Everything is portion controlled for me. I have a slight will power problem with rice, and this way I don’t go crazy. And again, lots of different varieties available, so I can have a different combination each day of the week. I used the multi-grain medley variety for these barbecue salmon bowls, which are hearty, healthy, and delicious!
From September 25th – October 8th Chicken of the Sea and the maker of Minute® Rice are having a Salmon Loves Rice Sweepstakes. All you have to do is use the hashtag #NationalSalmonDay on your social media to answer salmon trivia questions for your chance to win a 7-day Alaskan cruise as well as salmon pouches and ready to serve rice products! I have been wanting to go on an Alaskan cruise for years! So if you win, please take pictures for me!!
Make these barbecue salmon bowls for lunch or dinner and celebrate National Salmon Day on the 8th. Or tonight for dinner, because they are perfect for those last minute, nothing is planned, we only have 20 minute nights.
