These homemade Cookie Butter Granola Bars are super easy to make, no baking required and so much better than any store bought treat!

I love making homemade snacks. They can be anything from Chewy Granola Bars to Homemade Protein Bars or even Frozen Yogurt Cups. All super easy and so much better than store bought.

This recipe has been on the blog since 2012, after Maria from Two Peas & Their Pod posted a recipe for granola bars I knew I needed to make them as well. And they have been here ever since! 

If you haven’t tried Biscoff Spread or Cookie Butter, you are missing out! It is kind of like gingerbread flavored, cinnamon-y spread that is the consistency of peanut butter. If you have ever flown on a plane and gotten the little cookies pictured above, that is what the spread is made from and tastes like!

These granola bars come together on the stove top by just melting a few ingredients together, and then they set up in a baking dish. Super easy to make, and in about 10 minutes they will be chilling and setting up.

What You’ll Need

  • Butter – I always use unsalted in cooking
  • Light Brown Sugar
  • Honey
  • Biscoff Spread – depending on the store and brand it is sometimes called Cookie Butter
  • Vanilla Extract
  • Quick Cooking Oats
  • Rice Krispies
  • Biscoff Cookies
  • Mini Chocolate Chips

Yes, these are definitely more of a treat than a healthy snack with the sugar in them.

  • Prep. Prep an 8-inch baking dish by lining it with parchment paper.
  • Cook. In a large saucepan combine butter, brown sugar, honey, and Biscoff spread. Heat over medium-low heat, stirring occasionally until it beings to bubble. Once it starts bubbling, cook for 2 minutes, stirring the entire time.
  • Mix In. Turn off the heat, and add in the vanilla. Add the oats, Rice Krispies, and Biscoff Cookies. Stir until everything is evenly coated.
  • Spread In Pan. Pour into prepared baking dish. Press the oat mixture evenly into the pan. Sprinkle the chocolate chips over the top, and gently press them into the bars. Place in the fridge for 45 minutes, before cutting..

Storage

Once the bars have set up, you can remove them from the pan and slice into bars. You can store at room temperature for about a week. It is best to place a layer of wax paper or parchment paper between layers or they may stick together.

Recipe Tips & Tricks

  • These are great for people with peanut allergies, but if you want to use peanut butter in place of the cookie butter spread it would work very well.
  • I like to use mini chocolate chips as they are easier to mix in.
  • Cooking the mixture for the time listed is important. You are boiling the butter and sugar, and you need to do this for the right amount of time for the bars to set up. Too short and they won’t stick together well, too long and they will be hard to bite into. So use a timer and watch them.
  • I like to use quick cooking oats for this recipe since you aren’t cooking them. But old fashioned oats will work the bars will just have a different texture.

  • Store in an air tight container. I stored mine in the fridge, and just let them come to room temperature before eating.

  3. I bet I’d want these too instead of cookies. Homemade granola bars are just kind of evil. When I make them, I can not stop eating. Until each and every crumb is gone. So I normally only make 1/4 of the batch… but still. I wish I had the willpower to have them around the house! These sound SO good. Biscoff + granola bars. Sounds like trouble!
