Today my husband and I are going to start a 3 week diet of no added sugar.   We will still eat fruits and vegetables that have natural sugar in them, but if something has sugar as an ingredient, we are not going to eat it.  In preparing for this and looking at lots of labels, it is crazy how much sugar is in everything!  Even certain brands and varieties of canned tomatoes add sugar.  So we will see how it goes.  For someone who is addicted to chocolate, it is going to be a little tough!

Everything you read about health food says how good fish is for you.  It just isn’t one of my favorite things.  Certain fish I can eat, others there is not even a chance!  So when I find a mild fish recipe that I actually enjoy, I am super excited.  This Cracker Crusted Cod is so mild, but the crackers and seasoning add a great buttery flavor, that I loved.  If fish isn’t your thing, use this same recipe, just put it over chicken.

Cracker Crusted Cod is one of those dinners that is ready in just 20 minutes.  Fish bakes pretty quickly, and that is all you have to do here.  I served with a side of roasted edamame and French Onion Rice. My 9 year old will eat just about any fish you put in front of him, but he went crazy for this cracker crusted cod.  He has requested a few times since, and I know it will become a staple in our house.  Great for busy nights!

Cracker Crusted Cod

Cracker Crusted Cod – mild white fish baked with a coating of buttery Ritz crackers. Great on other white fish or even chicken!

Ingredients 

Instructions 

  • Preheat oven to 350º F.
  • In a bowl combine crushed crackers, Parmesan cheese, garlic salt, and Italian seasoning. Stir in melted butter.
    1 pound Cod fillets, 1 cup Ritz crackers, 1/4 cup Parmesan cheese, 1/2 teaspoon garlic salt, 1 teaspoon Italian seasoning, 4 Tablespoons butter
  • Arrange fish in a single layer in a baking dish. Sprinkle cracker mixture even over the fish fillets. Gently press down into the fish.
    1 pound Cod fillets
  • Bake for 15-20 minute, until the fish is flaky and cooked through.
