We love Thai food at our house. We love Indian food too. If it has curry in the name, there is a good chance we will like it. This Indian Chicken Curry Recipe is one of our favorites. But sometimes you want to mix up the flavors a bit, and that is where this green curry chicken comes in.
I am all over a dinner you can get on the table in just minutes, but totally mix up the flavors! This uses ingredients you can have in your fridge and pantry and just pull out and make for even those busy weeknights.
Thai green chicken curry uses a Thai green curry paste. It comes in a little jar that you can find in the Asian isle at the grocery store. I found it at Walmart and Target as well as my normal local grocery stores. So hopefully you won’t have a problem finding it. You just mix it with some coconut milk and it makes one delicious sauce!
Thai green curry is one of my favorites when I go out for Thai food, and who knew it was so easy to make at home. Seriously, you are going to love this. It is so full of flavor, not spicy at all, and just comforting. And I love that it uses pretty easy to find ingredients, so I don’t have to make special trips to the store.
This Thai green curry recipe could not be simpler. Trust me, you can make these even on those crazy busy nights! The coconut milk makes the chicken super tender, and the sauce is just a handful of ingredients. Serve over rice or even cauliflower rice for one tasty dinner. Just toss on fresh cilantro at the end to make it bright and fresh. Your family is going to love it.

Thai Green Curry Chicken

Thai Green Curry Chicken - a green curry chicken with lots of Thai flavor. You can make it in minutes any night of the week! And with ingredients you can find at your local grocery store.
Ingredients
- 1 pound boneless skinless chicken breasts, , cut into bite sized pieces
- 1 Tbls soy sauce
- 1 Tbls flour
- 2 Tbls canola oil
- 2 Tbls green curry paste
- 3 green onions, , chopped (only the green part)
- 3 cloves garlic, , minced
- 1 tsp fresh ginger, , minced
- 1 can coconut milk
- 1 Tbls fish sauce
- 1 Tbls soy sauce
- 2 Tbls sugar
- cilantro, , garnish
Instructions
- In a bowl toss the chicken with 1 tbls soy sauce and the flour, coating evenly. In a large skillet heat the oil over medium high heat. Add the chicken, and saute until browned (about 5 minutes). Remove chicken.
- Reduce the heat to medium. Stir in the curry paste. Cook for about 1 minute, until fragrant. Add green onions, garlic and ginger, cook for 2 minutes. Return the chicken to the pan, and stir until the chicken is coated with the curry mixture. Mix the coconut milk, fish sauce, 1 tbls soy sauce, and sugar in with the chicken. Simmer over medium heat for 20 minutes.
- Serve over rice, garnish with cilantro

My absolute all time favourite is the thai green curry. I make it all the time but mainly in the winter. I have made my own green curry paste, but I found it labour intensive, so I now buy the same brand you do. The heat is strong but it’s quite delicious.

I’m intrigued! I’m with you on a couple counts here… A) I’m a red curry person. I’ve never tried green curry before but this dish makes me want to. B) I ALWAYS order Pad Thai! Always! I can eat Thai food everyday, and Green curry is my husband’s first pick. It’s a bit spicy for me, so I have to stay with yellow curry… 🙁 Maybe I’ll practice eating at home so I can tolerate the spice better! Looks delish!

I tried the same curry paste.. But it doesn’t give the curry enough flavor at all! I even double the amount to put in the curry:( does yours taste like the one they surve at the restaurant?

I have never had it at a restaurant before 🙁 My husband did add more to his, so I would say keep playing with the amount.
