Today my 9 year old is taking part in his school spelling bee.  They had a test for the 4th and 5th graders, and only those kids that scored high enough moved on.  He was 1 of the 2 students in 4th grade to make it.  He has been studying a little bit, but how do you really prepare for a spelling bee.  He is excited and ready for it.  I, on the other hand, am not!

I will be there to watch, but I would really rather just sit at home and hear about it later.  I am way more stressed about this than he is.  Standing up in front of a large group, spelling words….I am just so nervous for him.  I am glad that he is so relaxed, I wish I could be!

From the spelling bee to a skillet meal.  I can not really think of a good segway there.  So we will just jump right in.  One skillet meals.  I am kind of obsessed and have been sharing a bunch of them with you lately.  Enchilada Pasta Skillet, Cheesebuger Macaroni Skillet, Mexican Rice Skillet, Sausage Pasta Skillet; to name a few. A skillet meal is just perfect for busy nights.  A handful of ingredients (usually pantry staples), one pan, 20 (ish) minutes, and dinner is done.  That has all the ingredients for a successful dinner at my house.

This Spicy Sausage Spanish Rice Skillet was a life saver one night.  We had been cleaning and working on stuff around the house all day.  All of us were exhausted, and as much as I didn’t feel like cooking; I felt like picking up pizza even less.  So I sucked it up and threw this together.  So little work for me, and it was so much better than take out.  I used Andouille sausage the first time, because that is what I had, but Chorizo would give it even more Spanish flavor.

Cook Time 25 minutes
Total Time 30 minutes

Ingredients

  • 1 pound sausage, (andouille, chorizo, kielbasa)
  • 1/2 cup onion, , finely chopped
  • 1 small red bell pepper, , chopped
  • 2 Tbls olive oil
  • 1 box Spanish Rice
  • 1 (14.5 oz) can diced tomatoes
  • 2 cups water

Instructions

  1. In a large skillet heat olive oil over medium high heat. Add onion, bell pepper and sausage. Cook until the onions are soft and the sausage is brown.
  2. Add rice, stirring to mix together. Saute until rice is lightly toasted.
  3. Stir in tomatoes, seasoning packet from the rice, and water. Bring to a boil Cover and reduce to a simmer. Cook for 15-20 minutes, until rice is tender.
  4. Serve immediately
