These Cinnamon Blondies are buttery, soft blondies loaded with cinnamon chips, cinnamon and topped with a cinnamon glaze!
Blondies are one of the easiest desserts you can make. No mixer required, just a bowl and spatula is all it takes. These are full of cinnamon as well as cinnamon chips and then a cinnamon glaze, that is optional, is drizzled on top. If you like cinnamon it doesn’t get much better!

These are were one of the first recipes I posted on the blog back in 2011, so it was high time they got a face lift and see the light of day again! Because they are definitely delicious and worth it. I have made them so many times over the years, but finally decided to photograph them again.
Why You’ll Love These Cinnamon Blondies
- Easy. I love any dessert that doesn’t involve getting out the mixer, so this is a favorite. Just a bowl and spatula, pour into a pan and bake!
- Cinnamon Goodness. If you like cinnamon these are a must. Ground Cinnamon, Cinnamon Chips and a Cinnamon Glaze are all included.
- Great For A Crowd. These bars are written for an 8-inch baking pan. But if you need them for a crowd, you can absolutely double for a 13×9 inch pan.

What You’ll Need

- Butter – I use unsalted butter with all of my baking
- Light Brown Sugar
- Granulated Sugar
- Egg
- Vanilla Extract
- All-Purpose Flour
- Baking Powder
- Cinnamon
- Salt
- Cinnamon Chips – Hershey sells these in lots of grocery stores
- Powdered Sugar
- Milk

How To Make Cinnamon Blondies
- Mix Wet. Melt the butter in a mixing bowl. Add both sugar and mix until very well combined and smooth. Add egg and vanilla and mix until fully incorporated.
- Add Dry. Add flour, baking powder, cinnamon and salt and mix until just barely combined. Fold in the cinnamon chips until combined.
- Bake. Pour batter into a prepared or lined 8-inch baking pan. Bake for about 25 minutes until a tester comes out mostly clean and they are golden brown. Remove and let cool.
- Glaze. Once the bars have cooled, mix together powdered sugar, cinnamon and milk until smooth. Drizzle over bars. Slice and serve.

Recipe Tips & Tricks
- Hershey makes Cinnamon Chips, they can be sometimes seasonal or hard to find. But I can almost always find at Walmart or Albertson’s brand stores.
- Be careful not to overmix your batter. Add the cinnamon chips when the mix is barely combined, a few white streaks are still ok when you add them. This will lead to softer more tender bars.
- Do not over bake these bars. You want to take them out of the oven when they are just barely done, even slightly under done is ok. They will continue to cook as they cool.
- This recipe can easily be doubled and made in a 13×9 inch baking dish.

Storage
Store bars in an airtight container for about 3-4 days.
If you want to make ahead to freeze you absolutely can. I would just freeze without the glaze. It will not have the same texture when it thaws, so it is best to just add the glaze when you are ready to serve them.

Cinnamon Blondies
Ingredients
- 1/2 cup butter, melted
- 1/2 cup light brown sugar
- 1/2 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 1/3 cup all-purpose flour
- 1 teaspoons baking powder
- 1 teaspoon cinnamon
- 1/2 teaspoon salt
- 1 cup cinnamon chips
Glaze
- 1/4 cup powdered sugar
- 1/2 teaspoon cinnamon
- 1-2 Tablespoons milk
Instructions
- Preheat oven to 350º F. Line 8-inch baking pan with parchment paper or spray with nonstick spray.
- Mix melted butter with brown sugar and granulated sugar until well combined and smooth. Add in egg and vanilla and mix until very well incorporated.
- Add the flour, baking powder, cinnamon and salt and mix until just barely combined. Fold in cinnamon chips.
- Pour batter into prepared baking pan. Bake for about 25 minutes, or until a toothpick comes out clean.
- Let the bars cool completely before cutting into them.
- When ready to serve, combine powdered sugar, cinnamon, and milk until the right consistency to drizzle. The amount of milk may vary. Drizzle glaze over bars. Serve.

How amazing are cinnamon chips?! I use them whenever I get the chance, totally addicted. These look super yummy!!
I haven’t baked with cinnamon chips either, but my mother-in-law makes an awesome cinnamon chip scone I have been itching to make. These look incredible so maybe I’ll have to pick up a couple bags of the chips.

It is an hour for us to get up into the mountains to get to snow too! But for us, we have been 12 hours drive from mountains our whole lives, so 60 minutes is nothing!!
