Caramelitas – An easy bar cookie with a buttery oatmeal cookie base and filled with chocolate and gooey caramel.
Have you made all of your cookies and treats for Christmas? We always make fudge on Christmas Eve, so I still have that, and I have been holding off on making our Frosted Sugar Cookies as well. But I am pretty sure without either of those, we have more than we need for the holidays. Today I am meeting with a large group of people from our neighborhood, and we are all taking treats to the fire stations around our town to say thank you. When I shared my White Chocolate Fudge recipe there is a video about how to Bake It Forward and help to end childhood hunger this holiday season. Well our neighborhood was so inspired, we are delivering all over town today!

I decided to bake these caramelitas for the fire station today. They are filled with gooey caramel and chocolate. All with a buttery oatmeal crust. You can’t really get much better than that! I definitely think these will be appreciated and hope they will brighten someones day! I know when I first made them my 10 year old came home from school and couldn’t get enough of them.
The hardest part about making these caramelitas is unwrapping a bag of caramels. The dough comes together in just a couple minutes, with no mixer required! So while the crust is baking, you can start unwrapping. And if you have a few extra little hands around, this is the perfect job for them. Just make sure they don’t eat all the goods 🙂 Then you melt the caramel, and pour it over the crust. The caramel stays all ooey, gooey, and delicious even after baking. Just make sure you let them cool all the way before serving. Make sure you have room on that holiday tray for these Caramelitas this year!
