This Crockpot Marry Me Chicken is an easy slow cooker dinner that’s creamy, comforting, and full of flavor. Chicken cooks low and slow in a rich sauce made with cream, sun-dried tomatoes, and seasonings for a meal that feels fancy but couldn’t be easier.
Crockpot Marry Me Chicken is one of those dinners that feels impressive but is surprisingly easy to make. Chicken slowly cooks in a rich, creamy sauce that’s packed with flavor, making it perfect for nights when you want something cozy and comforting without spending hours in the kitchen.

Just a few ingredients, minimal prep, and a slow cooker are all you need to create a dinner that feels restaurant-worthy. You can serve it over pasta, rice, or mashed potatoes to soak up every bit of that creamy sauce.

- Chicken Breasts
- Salt & Pepper
- Olive Oil
- Chicken Broth – you can use low sodium to cut down on the salt
- Garlic Cloves
- Cornstarch
- Sun-Dried Tomatoes – I use the ones packed in oil that I take out, drain, and chop
- Italian Seasoning
- Red Pepper Flakes
- Heavy Cream
- Parmesan Cheese
- Fresh Basil


Crockpot Marry Me Chicken
Ingredients
- 4 chicken breasts
- Salt & Pepper
- 1 Tablespoon olive oil
- 1 cup chicken broth
- 4 cloves garlic, minced
- 4 ounces sun-dried tomatoes, chopped
- 2 Tablespoons cornstarch
- 1 teaspoon Italian seasoning
- 1/2 teaspoon salt
- 1/2 teaspoon red pepper flakes
- 1/4 teaspoon black pepper
- 1 cup heavy cream
- 1/2 cup Parmesan cheese, grated
- 1/4 cup fresh basil
Instructions
- Season chicken breasts with salt and pepper on both sides. Heat oil in a large skillet over high heat. Once the pan is hot, add the chicken and brown for a couple minutes on each side. Do not cook through, this is just to get a little color on the chicken.4 chicken breasts, Salt & Pepper, 1 Tablespoon olive oil
- Place the chicken in the base of your crockpot. In a 2-cup liquid measuring cup whish together chicken broth, garlic, sun-dried tomatoes, cornstarch, Italian seasoning, red pepper flakes, salt & pepper. Pour over the chicken.1 cup chicken broth, 4 cloves garlic, 4 ounces sun-dried tomatoes, 2 Tablespoons cornstarch, 1 teaspoon Italian seasoning, 1/2 teaspoon salt, 1/2 teaspoon red pepper flakes, 1/4 teaspoon black pepper
- Cover and cook on low for 3.5 hours, until the chicken is tender and cooked to 165º F.
- Mix together the heavy cream, Parmesan cheese and fresh basil.1 cup heavy cream, 1/2 cup Parmesan cheese, 1/4 cup fresh basil
- Once the chicken is cooked through, remove from the crockpot, and pour in the heavy cream mixture. Stir well to combine. Add the chicken back spoon the sauce over the chicken and cook for 15 minutes until the sauce is warmed through.
- Remove and serve spooning extra sauce over each piece of chicken.

How To Make Crockpot Marry Me Chicken
- Brown Chicken. Season the chicken with salt & pepper and then brown with oil in a large skillet over high heat. You really only want to cook for a minute or two on each side, you do not want to cook the chicken. Place the browned chicken into your crockpot.
- Cook. Mix together the chicken broth, garlic, sun-dried tomatoes, cornstarch and seasonings until well combined. Pour over the chicken. Cover and cook on low for 3-3.5 hours. You want the chicken cooked, but not over done or dried out.


- Creamy Sauce. Mix together the heavy cream, Parmesan cheese and fresh basil. After the chicken is cooked pour this mixture in with the cooking liquid and stir to combine, it will make a rich and creamy sun-dried tomato sauce. Add the chicken back to the pot, and let it cook for about 15 minutes to warm up the sauce.
- Serve. Once everything is hot, remove the chicken and spoon some of the sauce over each piece. Top with Parmesan cheese and more basil if desired.


Recipe Tips & Suggestions
- Pasta. This is great served like Marry Me Chicken Pasta. When I want to do this, I cook a box of pasta, and when I remove the chicken to make the sauce I chop up the chicken and add that and cooked pasta back to the crockpot. Stir and you have enough sauce for about 12 ounces of pasta.
- Don’t Over Cook. Crockpots are known for being able to cook all day, but chicken cooks quickly. If you let it sit all day, it will dry out. That is why a lot of people don’t like chicken from the crockpot. Cut down on the cooking time and stop when it just reaches 165º F, and you will be much happier with the results.
- Browning Chicken. This is an extra step, but it does give the chicken a little more flavor and texture. Will the recipe work if you skip this? Yes. But it won’t be quite as good.

Serving Suggestions
The sauce on this chicken is something you want to make sure you enjoy. So serving over pasta or with Olive Garden Breadsticks or Mashed Potatoes are the perfect way to make sure you soak up all the sauce.
Storage
Store leftovers in an airtight container in the fridge for up to 4 days. Reheat slowly in the microwave as the sauce will separate and not be creamy if you heat quickly.
Because of the cream sauce this doesn’t freeze well. So I would adjust the recipe (you can easily cut in half) if you will not eat it all in a few days.
