Raspberry Mimosas – A great drink for brunch or your next party.  Raspberry sorbet, champagne, raspberry liqueur and a few fresh raspberries make for a delicious cocktail. 

We all know that I love a good cocktail. If we are having friends over, I like to have a different cocktail depending on the event.  A summer party is great for a Mai Tai where you feel like you are on vacation.

If you are doing brunch?  Mix it up with a Tequila Sunrise. Or break away from the traditional mimosa with this Raspberry Mimosa. This is almost like a punch, it is so good and so refreshing!  Definitely fancy enough, you will impress your guests.

I first discovered what chambord was when I tried a French Martini. It is a raspberry flavored liqueur that is delicious.  So I had to come up with more uses for it, and that is where this mimosa comes in.  You combine a your favorite champagne with raspberry sorbet and chambord and then top with just a few fresh raspberries.

The sorbet is what makes it more like a punch. But it also makes it more refreshing and a fun twist on the classic orange juice mimosa.  You could do this with orange juice, orange sorbet and triple sec as well if you wanted a little bit more traditional version. But I like this sweet, and pretty red colored version personally.

What is a Mimosa

Traditionally it is made up of champagne and a citrus juice, normally orange juice.  So we are going a little bit out on a limb with this version, but it is delicious no matter what you call it!  

What is the Best Champagne for Mimosas

A Prosecco or if you can find a Spanish Cava that is the best.  You want a dry or even semi-dry sparkling wine.  You want to avoid the super sweet sparkling wines on the shelf, you get enough sweetness from everything else in the drink. Just find something that you like to drink that doesn’t break the bank for this and it will be perfect!

If fresh raspberries are not in season, you can definitely use frozen.  They will help keep everything cold if that is what you use.  And you could even just skip them.  They really just make the drink pretty and let everyone know what the flavor is going to be.

So the next time you are having brunch, mix up your cocktails!  These raspberry mimosas will be a show stopping drink that everyone will be asking about.  And this Chocolate Chip Coffee Cake just might be my all time favorite brunch treat as well.

Raspberry Mimosas

Raspberry Mimosas - A great drink for brunch or your next party.  Raspberry sorbet, champagne, raspberry liqueur and a few fresh raspberries make for a delicious cocktail. 
Prep: 5 minutes
Total: 5 minutes
Servings: 4

Ingredients 

  • 750 ml 1 bottle Prosecco or other sparkling wine
  • 1/3 cup raspberry sorbet
  • 4 oz chambord
  • 12 raspberries

Instructions 

  • Place a small scoop of sorbet into the bottom of each champagne flute.
  • Add 1 oz chambord to each glass.
  • Fill each glass with Prosecco.
  • Garnish with a few raspberries in each glass.
  • Serve immediately.
