Recipe Tips & Suggestions
- Carrots. I like to use baby carrots because they are just so easy! But you can use any carrots you like. You can peel and slice full sized carrots, you could slice them into thicker coins and have bite sized pieces. It really is up to you!
- Seasoning. I really wanted a more savory glazed carrot with just a little sweetness. So there is brown sugar, but the garlic powder and thyme really balance it out and give it a savory twist.
- Serving. You can serve with a little fresh thyme after they are cooked to take them to a new level.
- No Crockpot? If you want to make this in the oven, you can absolutely just make roasted carrots with this same recipe. I like to cook at 375º for about 30 minutes, stirring half way through. How long you cook will depend on the size of your carrots and your desired doneness.
- Recipe Size. I use 2 pounds of baby carrots in a 6 quart slow cooker. If you want to make 1 pound, I like to use my smaller 2 quart crockpot. If you want to make more, you could easily do 3 pounds in the 6 quart. Or you could make Air Fryer Carrots if you are making a smaller batch as well.

Storage
Leftover glazed carrots can be stored in the fridge for 4-5 days. You can reheat them in the microwave or I like to put them in a skillet to gently reheat and give them just a little bit of texture.
These are not the best to freeze, so I would only make what you can eat in a few days. They are great for meal prep for the week as well, but not after they have been frozen.
