Sous Vide Pork Tenderloin – A fool-proof way to get the most tender, flavorful, and delicious pork tenderloin ever!

Pork Tenderloin has always been on of our favorite cuts of pork. It is so tender and you can flavor it however you want. Plus, it is one of those cuts of meat that doesn’t take hours to make it tasty and delicious.

Once you try it sous vide, you will never go back! It is the most tender and delicious cut of meat ever this way. It cooks in about an hour, but you can leave it in the sous vide bath for up to about 4 hours, so it is great for holidays, dinner parties or even weeknight meals when you have a little time in the afternoon.

The key to making pork that is tender and juicy is cooking it to the right temperature. Whether you are baking, grilling, or cooking it on the stovetop, cook pork to 145º F. When you hear people say pork is dry, or they gave up cooking pork because it is always like a hockey puck, it is because they are over cooking it! The FDA says it is safe to eat at 145º F, so there is no reason to cook it further.

How To Sous Vide Pork Tenderloin

  1. Preheat the water bath using your sous vide to 145º F.
  2. Mix together the rosemary, garlic, salt, pepper, and olive oil and generously rub all over the pork.
  3. Place the pork inside your plastic bag and if using a vacuum sealer, seal the bag. If you do not have a vacuum sealer, you can use a zip top bag that you seal almost all the way. Slowly add the bag to the water bath until just below the top is submerged. Then seal the rest of the bag to ensure most of the air is out.
  4. Once the water is up to temperature, place the sealed bag of pork in the water, making sure it is fully submerged.
  5. Cook for about an hour, but you can leave it in for up to 4 hours if needed.
  6. Remove pork from the bag and use a paper towel to pat it dry.
  7. Heat oil in a large skillet over high heat. Once the oil is shimmering you know it is hot enough.
  8. Carefully place the pork tenderloin in the pan and cook for about 30-45 seconds a side, until it is nicely browned.
  9. Remove from the pan and slice to serve.

When you are cooking something sous vide, you do miss out on the nice crust that the oven or a pan gives you. Searing it in oil or butter gives you that back. You want to make sure to fully pat the meat dry or you will not get a good sear.

Not only does this help give it great flavor and texture, but makes it look great as well. It is not the most beautiful cut of meat when you remove it from the bag, but searing it changes all that.

How Long To Sous Vide Pork Tenderloin

You really only need to cook it for 60 minutes to get it perfectly cooked and tender. But you can leave it in there for up to 4 hours without affecting the taste, texture, or done-ness. So if you want to start it ahead of time, you definitely can.

Pork Tenderloin Sous Vide Temp

I like to cook mine at 145º F. Technically if you cook it long enough you can go for a lower temperature and still have it be safe to eat. But regardless if it is safe or not, I can’t wrap my head around pink pork.

And 145 degrees F leads to a perfectly juicy and delicious cut of meat in 60 minutes, which is good for me!

Can You Sous Vide Pork Tenderloin In The Package

You see a lot of pre-seasoned and pre-marinated pork tenderloins in the meat department. As long as the package says that it is “microwave-safe” or “boil-safe” you can use it. If not, you can transfer to a microwave-safe bag and still use the pre-seasoned pork from the store.

Can You Sous Vide Frozen Pork Tenderloin

Yes, you definitely can! When you buy pork tenderloin they often come in a package of two. So I often cook one right away, and then season the other one, vacuum seal it, and put it in the freezer. If I forget to plan ahead and take it out to thaw, I just add an additional 45 minutes to the cook time to give it time to thaw in the water. Super easy!

What To Serve With Pork Tenderloin

Pork tenderloin is one of the cuts of meats that is lean and can easily become tough and over done when cooked in the oven. This takes all the guess work out of it, and makes it perfect every time! With almost no work on your part.

It is fancy enough you can serve for guests, but easy enough you can make on busy weeknights.

I use the Joule by Breville Sous Vide, and I highly recommend it. It works very well, the temperature is accurate and it is reliable. I have used 2 others in the past few years that have not lasted.

Ingredients 

  • 1 pork tenderloin, approximately 1 pound
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 cloves garlic, minced
  • 4 springs fresh rosemary, finely chopped
  • 2 Tablespoons olive oil
  • 1 Tablespoon vegetable or avocado oil

Instructions 

  • Preheat the water bath using your sous vide to 145 degrees F.
