Instant Pot Pork Tenderloin – a tender and juicy pork tenderloin that is cooked in the instant pot with an easy mushroom sauce!
I am always trying new Instant Pot recipes, they are one of my favorite things right now. I have a few coming up here soon, so if you like them as well, stay tuned! These Instant Pot Pork Tacos might be one of my new favorites.
We end up cooking a lot of pork in the Instant Pot because it tends to get it super tender and still stays moist and juicy. Like this amazing Instant Pot Pulled Pork. If you haven’t tried it, I hope you will soon it is seriously amazing! Pork tenderloin happens to be one of my favorite cuts of pork though, so I decided to see how that went in my trusty Instant Pot.
My family eats a ton of pork. So much so, that we actually bought a whole pig last year. We still have a few pieces left, but ate almost the whole thing in a hear. Everything from Smothered Pork chops to just grilled pork chops, ham and everything in between.
So if you have followed along before, you know I have talked about the cooking temperature of pork a lot! See a whole graphic and all the reasoning behind it in my Baked Pork Chops Recipe. But basically the pork tenderloin temperature is 145 degrees. Over that and you get dried out pork! When you are cooking with an IP, you don’t get to take the temperature of the pork, but cooking it for such a short time leaves the pork nice and juicy.
How Long to Cook Pork Tenderloin in the Instant Pot
This recipe calls for cooking it for 8 minutes, and then letting it naturally release for 5 minutes. This is enough time to cook the pork and keep it tender, juicy and not over cooked. Often times when you cook meat in the IP you shred it afterwards. I wanted this to be able to cut into slices like you would this baked pork tenderloin.

- Mashed Potatoes
- Roasted Asparagus
- Salad
- Rice
- Any veggies that you like
Pretty much anything goes. This pork tenderloin recipe has a mushroom sauce that goes with it, so potatoes or something to soak up the sauce is great. But anything your family will actually eat is a good idea.
Instant Pot Pork Tenderloin is great for any night of the week. A quick spice rub gets put on the pork so it has tons of flavor and is anything but boring. I am love mushrooms, so I couldn’t resist making a mushroom sauce. I love just easy sauteed mushrooms, so using them in a recipe is a must.
You can rub the pork with the spice rub in the morning and have it sitting in the fridge when you get home if you want to take a short cut. But even with the Instant Pot coming up to pressure you can have dinner on the table in about 30 minutes with this recipe!

Instant Pot Pork Tenderloin

Ingredients
- 1 pork tenderloin, approximately 1 pound
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1 teaspoon dried thyme
- 1/2 teaspoon black pepper
- 2 Tablespoons vegetable oil, divided
- 16 oz package mushrooms, thinly sliced
- 1 cup chicken broth
- 1 Tablespoon soy sauce
- 1 Tablespoon cornstarch
- 1 Tablespoon water
Instructions
- Mix together garlic powder, salt, thyme and black pepper. Rub evenly over the pork tenderloin
- Heat Instant Pot using the "Saute" setting.
- Pour 1 Tbls oil into the pot. Sear pork on all sides until lightly golden brown. Remove from pot.
- Add remaining oil to the pot, mix in mushrooms. Saute for 2-3 minutes.
- Add pork back in, as well as the chicken stock and soy sauce. Cover and cook under high pressure for 8 minutes.
- Naturally release for 5 minutes.
- Remove pork from the pot and let rest. Mix water and cornstarch together and add to the sauce in the pot. Turn the Instant Pot back onto Saute and cook for 2-3 minutes until the sauce is thickened.
- Serve sliced pork with mushroom sauce
