What You’ll Need

  • Rice Chex Cereal
  • Butter
  • Corn Syrup
  • Sugar
  • Vanilla Extract
  • Powdered Sugar
  • White Chocolate Chips
  • Sprinkles

  • Prepare the cereal – Place the Rice Chex in a large, microwave-safe bowl to have it ready for coating.
  • Make the sugar mixture – Melt the butter in a separate bowl, then mix in the sugar, corn syrup, and vanilla until smooth and combined.
  • Coat the cereal – Pour the sugar mixture over the Chex, stirring gently until the cereal is evenly coated.
  • Microwave to set – Microwave the mix for 2 minutes, stirring halfway through to make sure the coating is well distributed.
  • Add the sweetness – Stir in the white chocolate chips, then sprinkle powdered sugar over the mix and toss until it’s fully covered.
  • Cool and decorate – Spread the mixture onto a lined baking sheet and immediately top with sprinkles. Let it cool completely before serving or storing.

  • Use a large mixing bowl. This recipe makes a big batch, so make sure to use a large bowl to comfortably stir and coat the cereal without making a mess.
  • Melt the butter slowly. Heat the butter in short intervals to avoid it burning or bubbling over in the microwave. Stir in between to ensure even melting.
  • Stir gently. When mixing the cereal with the sugar coating, stir carefully to avoid crushing the Rice Chex. You want to keep those pieces whole for the perfect crunch.

  • Pour cereal into a large microwavable bowl.
  • In a 2 cup microwavable measuring cup heat butter until melted. Add sugar and corn syrup. Heat for 30 seconds, stir until smooth. Add vanilla.
  • Pour over cereal, and mix to coat. Add white chocolate chips, and stir.
  • Heat for 2 minutes, stirring after 1 minutes.
  • Sprinkle with powdered sugar and mix.
  • Pour on a lined baking sheet to cool. Sprinkle immediately with colored sprinkles.

  1. I think there is a 1/4 cup of sugar missing in the above recipe. The box of Chex calls for it. Just a heads up.

  3. Has anyone tried using corn chex, bugels, pretzels etc in with this mix? If so how did it taste? I have a child who loves the bugels, the other prefers the corn chex.
