Watermelon Ice Cream – Refreshing watermelon gets mixed with cool and creamy ice cream for a great summer treat. Plus a few chocolate chips for the “seeds.”
Yesterday we got to attend a summer party with my husband’s company. In the past it has been at their site, but they have brought in all sorts of fun games, vendors and events. This year (well actually last year, but we weren’t around for it) they switched things up. We went to a beach at Horsetooth reservoir and spent playing in the water. They had wave runners, stand up paddle boards, pontoons, and boats for water skiing. It was a lot of fun and the weather was perfect. I hope they continue this, because it is different and a great way to get away from work and get to know your co-workers and their families better.
I think summer is meant for watermelon. There are just so many different ways you can enjoy it; like this super refreshing watermelon salad. This cool and creamy watermelon is cream is one of the best ways. Or even in a drink as a watermelon soda. So versatile, and just screams summer no matter what way you have it. Personally I always have sliced watermelon in the fridge all summer long, it makes for a great snack all on its own.
Watermelon ice cream is super fun and a new twist on ice cream. I even added a few chocolate chips for the “seeds” of a watermelon. This ice cream recipe is actually pretty easy. You just heat milk on the stove top until it thickens. Then once that is cool you add in pureed watermelon juice, and let your ice cream maker do the rest. Cool, creamy, refreshing, and a delicious way to enjoy summer!
Watermelon Ice Cream
Ingredients
- ¾ cup sugar
- 1 Tbls cornstarch
- 1 cup whole milk
- ¾ cup heavy cream
- ½ tsp vanilla extract
- 10 cups approx. watermelon cubed (2 ½ cups juice)
- ½ cup mini chocolate chips
Instructions
- In a medium sauce pan heat sugar, cornstarch, whole milk, and heavy cream over medium heat until it starts to bubble and thickens slightly; about 5-10 minutes. Remove from heat and stir in vanilla. Cool completely.
- Puree watermelon in a blender or food processor. Pour through a strainer. Chill for 3-6 hours.
- Mix chilled juice with milk mixture. Make sure it is cold. Pour into an ice cream maker, and churn for 20 minutes, or according to the appliance instructions.
- Once churned, fold in the chocolate chips. Place in an air tight container in the freezer for 2-3 hours until ready to serve.
