Watermelon Soda – Turn juicy watermelon into a refreshing watermelon soda with a twist of lime! Great to beat the heat this summer!
Summer break is officially here!! Well, at least in Colorado. And according to Facebook, many other parts of the country are done as well. So that means playing outside, trips to the pool, and lots of playing with friends. And if you are my kid, you then have to spend 1 hour a day working on math and reading. I am apparently the meanest mom out there. Did you know summer break is for playing, and not school work? Yeah, well deal with it. I am mean and want you to keep up some of the stuff you learned this year. So I require 30 minutes of math and 30 minutes of reading a day. So if you do less with your kids, and they complain, you can tell them you know someone how is meaner than you are!
So with all of that outside time, you need something that is going to cool you off when you come inside. Watermelon Soda is the answer. Watermelon soda is made with tons of fresh watermelon, so you can even feel good about giving it to your kids. I added lime juice to cut some of the sweetness and give it just a little tartness. Super refreshing after a hot day outside. Plus you do almost all of the work in the blender, so it couldn’t be easier!
The next time you are at the store pick up an extra watermelon so you can make this watermelon soda. Your kids will think they are getting a special treat, and you will look like a super star. It might make them forget you made them work on math in the morning. At least that is what I am hoping will happen with my 10 year old. When I made this watermelon soda, I kept my sparkling water separate, and just poured it over the top of each glass as we drank it. That way it didn’t go flat, and we didn’t have to rush to drink it all at once. And if you want to go with the adult version, use a bottle of sweet prosecco instead of sparkling water!
- 3/4 cup sugar
- 1/4 cup water
- 10 cup diced watermelon
- 3/4 cup fresh lime juice
- 4 cups sparkling water, (I used lime flavored)
- In a blender combine watermelon, water, sugar, and lime juice. Blend until smooth.
- Pour through a fine mesh strainer to get rid of any seeds.
- In a large pitcher mix together watermelon mixture and sparkling water.
- Pour over ice to serve.
