Lemon Crinkle Cookies

Lemon Crinkle Cookies -Made from scratch lemon cookies that are sweet and slightly tart.  Super soft on the inside with slightly crispy edges.

There is just something about spring that makes me want all the lemon desserts!  It can be as basic as lemon bars. I really just want all the lemon!  Creamy lemon mousse is a great one to make ahead of time and have for entertaining.

Chocolate Crinkle cookies are a classic around Christmas time, so why not have a lemon version for spring and summer.  Soft and tender cookies that are slightly sweet and a little bit tart.  They are coated in powder sugar and baked up to thick and chewy perfection!

I have seen a million version of these lemon cookies made with a cake mix.  They are bright yellow in color and only have a couple of ingredients.  Well this lemon cookie recipe is made from scratch.  And they are super simple to make!  Plus lots of natural lemon flavor!

Because these lemon crinkle cookies don’t use a cake mix they are not bright yellow.  You can fix that easily enough by adding food coloring, but totally not necessary! Just because they aren’t bright yellow, doesn’t mean they aren’t full of lemon flavor.

In the spring citrus comes back in season and is on sale everywhere.  So you can make lemon ricotta pound cake  or even homemade lemon curd. Seriously, I can’t get enough of all the lemon desserts. These cookies have both lemon juice and lemon zest, so you get tons of bright flavor.

Lemon Crinkle Cookies - Super soft on the inside with slightly crispy edges, these made-from-scratch Lemon Crackle Cookies will melt in your mouth. Sweet and slightly tart

Prep Time 10 minutes
Cook Time 10 minutes
Total Time 20 minutes

Ingredients

  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 whole large eggs
  • 1/2 teaspoon vanilla extract
  • 3 tablespoons lemon juice (about 2 lemons)
  • Zest of 2 lemons
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup (for rolling) powdered sugar

Instructions

  1. Preheat oven to 350°F.
  2. In electric mixer, cream together butter and sugar until fluffy.  Add eggs, vanilla, lemon juice and lemon zest.  Mix until everything is well combined. 
  3. Add flour, baking powder, and salt. Mix until well blended. 
  4. Using a small cookie scoop, scoop balls of dough and roll each ball through powdered sugar.  Place on a baking sheet, at least 2-inches apart. 
  5. Bake for 9-10 minutes until edges are set. 
  6. Remove from oven and rest for 2-3 minutes on the baking sheet until moving to a wire rack to cool completely.

Do you think you could replace it with the juice of orange or another citrus, or even fruit or would it change the texture?

I am sure you could use orange juice and make these orange flavored - that would work fine. Mixing in fruit would not work - you are just giving them a hint of lemon flavor with the lemon juice.
