We had the first day of school here yesterday. For the most part things went well. It was a little hectic getting out the door in the morning, but that was mainly because we have friends visiting right now. Hopefully by the end of the week, we will be back into our routine, and not rushing so much 🙂 My 9 year old likes his teacher, and has a few friends in his class, so that is promising. He is a little bummed that all of his really good friends are in other classes, but I am sure it will all work out OK in the end. The biggest thing for me is to get back into the swing of making a lunch for him! It might be time to get him involved, and have him help pack it each day 🙂
So now that school is in session, that means it is time to get a plan in place for lunches, after school snacks, and quick dinners. I don’t know about other kids, but my 9 year old comes home from school pretty much starving each day. So I try to have a few things on a hand; homemade protein bars, granola bars, and snack mixes, so finding a snack is quick and easy after school. That is where treats like brownie batter dip come in! Sometimes you just have to have fun with your snacks!
Brownie Batter Dip is quick and easy to throw together. Just a little cream cheese, chocolate spread, and International Delight coffee creamer for extra chocolate brownie flavoring. Serve it with fruit or even with crackers, and the kids will go crazy for it! It lasts in the fridge for about a week, so you can make it on Sunday and have it all week as a treat. Brownie batter dip travels great as well, so bring it to the next get together or pot luck you are going to. Trust me, everyone will be asking you for the recipe.
- 1 (8oz) package cream cheese
- 1/2 cup chocolate spread
- 1/4 cup International Delight Cold Stone Creamery Founder's Favorite Creamer
- 2 Tbls powdered sugar
- 1 tsp vanilla
- 2 Tbls chocolate chips
In a mixer blend together cream cheese and chocolate spread until smooth. Add creamer, sugar, and vanilla. Beat until light and fluffy.
Place in a bowl, and garnish with chocolate chips.
Store in the fridge in an air tight container.
