Cashew Milk Pumpkin Steamer – a hot cashew milk drink with pumpkin and pumpkin pie spice.  Perfect way to warm up this holiday season.

I can not believe that we are less than a week away from Christmas.  I have no idea where the time has gone!!  My son has his last day of school today.  Which means I should have presents bought and wrapped, work done, cookies baked, and everything else ready for Christmas.  Like maybe know what is on our Christmas dinner menu, and have it purchased.  But I am not sure that any of that stuff is done yet.  We might be close to done shopping, but not all of the stuff has arrived yet, and I have yet to wrap a single present.  Each year I start December off really well, and tell myself I will keep up and not get buried at the end.  I think I always just think I can do more than is possible.

Cashew Milk Pumpkin Steamer {Dinners, Dishes, and Desserts}

So in case you are like me, and not ready for the holidays, I have a recipe for you.  This drink is perfect to make ahead, and have warming and ready for your get together.  Instead of coffee Christmas morning (blaspheme, I know), this pumpkin steamer would be perfect. I actually brought this to a cookie exchange in the neighborhood a couple weeks ago.  Everyone loved it.  You can top it with the spiced whipped cream, use pre-made whipped cream, or just drink it plain.  Any way you choose, it will warm you up and taste like the holidays.

I used new Silk Cashew Milk to make this steamer.  The cashew milk gives it more depth and is creamier than regular skim milk I would have used.  Cashew Milk is obviously made with cashews, so if you have a dairy allergy, it is a great alternative for you.  My husband has taken to having it on his cereal, and he loves it.  I used Original Cashew Milk for this recipe, if you use the unsweetened variety you might have to adjust the sugar in the recipe to your liking.  Store leftovers in the fridge, and heat in a mug to enjoy later.  Perfect for after playing in the snow or shoveling, or just because you are thirsty; no judgement here!

Cashew Milk Pumpkin Steamer

Cashew Milk Pumpkin Steamer - a hot cashew milk drink with pumpkin and pumpkin pie spice. Perfect way to warm up this holiday season.

Ingredients 

Drink

  • 4 cups Cashew Milk
  • 1/2 cup pumpkin puree
  • 1/2 cup sugar
  • 1/2 teaspoon pumpkin pie spice

Whipped Topping

Instructions 

  • In a large pot combine all of the ingredients for the drink together. Heat over medium heat, whisking thoroughly. Heat to a simmer.
  • In the bowl of an electric mixer whip heavy cream until stiff peaks. Add sugar, ginger, and cinnamon, whip until combined.
  • Serve steamer with a dollop of whipped cream

Notes

If serving for a party: Once warm, pour cashew milk mixture into a slow cooker and heat over low.
