This Chicken Seasoning is a super simple spice blend using basic spices you probably have already. It is great for chicken cooked in the oven, grilled, on the stove top or just about any way you can think of!
Chicken is probably the most common protein that is cooked in the US for dinner. And let’s face it, it can get boring. I pride myself on coming up with Easy Chicken Dinner Recipes that aren’t boring, but people get stuck in ruts and aren’t always branching out.
This chicken seasoning takes the place of the store bought spice blend a lot of people use. You can control the salt the sugar and the spices, to make it what you want. And then you can get creative with how you want to cook your chicken to keep things interesting. Use it on Grilled Chicken or A Whole Roast Chicken or you could use it on Air Fryer Chicken Breast. So many options it is great to have in your pantry for busy nights.

- Easy – This blend uses things you probably have on hand already, and takes less than 5 minutes to throw together. I make a big batch so it is always in the cabinet ready to go.
- Versatile – If you like things spicy, add a little cayenne. If you don’t like thyme, use oregano. Super easy to mix it up and make it how you like.
- Control – you get to control the salt and sugar and know what is in your spice blend. Lots of people want to cut back on salt, so leave it out! It is completely up to you.

- Garlic Powder
- Paprika
- Onion Powder
- Cumin
- Chili Powder
- Dried Thyme
- Sugar – helps to caramelize the meat, if you want to leave it out you can.
- Black Pepper
How To Season Chicken
To start all you have to do is mix all of the seasoning ingredients together. And then you are ready to get cooking!
- Trim you chicken, you can use any type you like (breast, thighs, wings, legs). Just trim off any excess fat or tough spots.
- Brush chicken with just a tiny bit of oil to help the chicken seasoning stick well to the meat.
- Use about 1-2 Tablespoons of seasoning per pound of chicken. But that is just a guide, if you like more use more!
- Then cook however you like. You can throw it on the grill, you can bake chicken breasts, you can cook them on the stove. Just cook to 165º F internal temperature and then you are ready to eat.
How To Store Chicken Seasoning
You can make a small batch of this that works for just 1 pound of chicken, or you can make a big batch to have on hand. If you make extra store in an airtight container in your pantry or spice rack, just like you do other spices. It will last for about 6 months, it really depends on the age of your spices when you start how long the potency of the spices will last
The small amount of sugar helps to caramelize the meat and lock in the juices. It is in all of the store bought chicken seasoning blends that this would replace. If you really want to cut out the sugar you can.
If you are watching your sodium intake you can reduce or omit the salt in the recipe. Obviously that will change the taste for those that don’t need to watch their sodium, as salt helps bring out and accentuate the flavors.

Ingredients
- 2 Tablespoons Kosher Salt
- 2 Tablespoons Garlic Powder
- 1 Tablespoon Paprika
- 1 Tablespoon Onion Powder
- 1 Tablespoon Cumin
- 1 Tablespoon Chili Powder
- 1 Tablespoon Dried Thyme
- 1 Tablespoon sugar
- 1 1/2 teaspoon black pepper
Instructions
- Measure all of the spices into a small bowl.
- Mix until everything is well combined.
- Store in an airtight container for 6 months to 1 year.
