Cinnamon and sugar come together to make this Churro Chex Mix absolutely crunchy and delicious. A great snack, treat or even gift.
When I was growing up savory snack mixes like Party Mix were a staple. But later I learned about things like Sugar Cookie Chex Mix and Patriotic Party Mix and other sweet versions. And there is most definitely room enough for both!
This Churro Chex Mix uses your favorite chex cereal, I used rice chex but they also sell Cinnamon Chex that would be delicious and up the cinnamon flavor even more.
A butter, sugar, and brown sugar mixture comes together to coat the cereal and then you bake it until it is the perfect crunch. It is down right addicting on its own or you can use it as a topping for ice cream for a fun treat.

- Chex Cereal – you really can use any variety that you like
- Brown Sugar
- Sugar
- Butter
- Corn Syrup
- Cinnamon
How To Make Churro Chex Mix
- In a saucepan melt together butter, brown sugar, and corn syrup together. Once it comes to a boil, let it cook for 1 minute.
- Pour the butter mixture over the cereal and mix until it is well coated.
- Sprinkle cinnamon and sugar over the cereal and spread evenly on a lined baking sheet.
- Bake for about 30 minutes, stirring every 10 minutes.
- Remove from the oven and let it cool completely before serving.
Recipe Tips & Tricks
- Use a timer when you are boiling the butter mixture. It is like making candy, so if you boil it too long your mixture will be too crispy, too short and your mixture will be soggy.
- If you like it crunchy (makes the best ice cream topping this way!) cook it for 40 minutes instead of 30.
- Use whatever your favorite Chex cereal is. I used rice chex for their neutral flavor, but corn chex or Cinnamon Chex would up the flavor even more.
- Add mix-ins! You can add sprinkles if you want to make it festive, but candy, butterscotch or white chocolate chips, or pretzels and nuts would be great mixed in.
Storage
Store churro chex mix in an airtight container for 1-2 weeks. You can absolutely freeze it as well! It is great for up to 3 months. Just let it thaw on the counter before serving.

- 8 cups Chex cereal
- 3/4 cup light brown sugar
- 1/2 cup unsalted butter
- 1/4 cup corn syrup
- 1/2 cup granulated sugar
