Dorito Taco Salad – This easy taco salad is loaded with seasoned ground beef, crunchy nacho cheese Doritos, fresh veggies, and a creamy ranch-salsa dressing. It’s bold, satisfying, and perfect for potlucks, parties, or busy weeknights when you want something fun and flavorful without a lot of fuss.

There’s something about this salad that instantly makes me think of summer cookouts, paper plates, and going back for seconds. It’s bold, crunchy, a little messy—in the best way—and ridiculously satisfying.

I started making it for low-key backyard dinners, and now it’s my go-to anytime I want something fun that still counts as “a real meal.” 

The nacho cheese Doritos steal the show (no surprise there), but the taco-seasoned beef, creamy avocado, and zippy dressing definitely hold their own. 

You can keep things chill and serve it as-is, or pair it with something fresh and citrusy like this Mojito Margarita if you’re feeling a little festive.

  • Ground Beef — Ground turkey works here too if you want a lighter version.
  • Taco Seasoning — One packet of store-bought seasoning is easy and reliable. Or Homemade Taco Seasoning is great to have on hand.
  • Corn Kernels — Canned, frozen (thawed), or fresh-cut off the cob all work great.
  • Beans — Kidney, black, or pinto are all delicious. Kidney beans are the classic taco salad pick and hold up well when tossed. Black beans are a little earthier and pair really nicely with the Doritos.
  • Shredded Cheddar Cheese
  • Diced Tomato — Roma tomatoes are a good call here because they’re less watery than beefsteaks. Cherry tomatoes halved also work great and hold their shape well.
  • Avocado — Dice it right before serving to keep it from browning. A squeeze of lime juice helps too if you’re prepping it slightly ahead.
  • Sliced Black Olives
  • Iceberg Lettuce — Iceberg is ideal here because its crunch holds up against the warm meat and dressing. Romaine is a solid swap if that’s what you have.
  • Nacho Cheese Doritos — Add these right before serving they’re the star of the show, and you want them crunchy. Lightly crush them in the bag before opening so you get bite-sized pieces rather than large shards.

For The Dressing

  • Ranch Dressing — Bottled ranch is perfectly fine here but if you have Homemade Ranch Dressing on hand, you can absolutely use it.
  • Salsa — Use whatever salsa you love. A chunky medium salsa gives the dressing body and a little heat. Mild works for the kids; hot if you like things spicy.
  • Mayo — Just a couple of tablespoons — this makes the dressing thicker and creamier without making it taste like mayo. Don’t skip it.
  • Chili Powder, Cumin & Cayenne — These three spices bring warmth and depth to the dressing. Start with the amounts in the recipe and adjust to taste. Add more cayenne if you like heat, less if you’re serving kids.

Dorito Taco Salad

Dorito Taco Salad – a fresh a delicious salad loaded with seasoned ground beef, beans, cheese, tomatoes, avocado, plenty of crushed Dorito tortilla chips and tossed in a creamy homemade dressing.

Ingredients 

Dressing

Instructions 

  • In a large skillet brown ground beef until fully cooked. Drain any fat. Add taco seasoning and water called for on the packet. Mix and simmer until liquid is absorbed.
    1 pound ground beef, 1 packet taco seasoning
  • To make the dressing mix together ranch dressing, salsa, mayo, chili powder, cumin and cayenne pepper. Mix until smooth and well combined. Store in fridge until ready to use.
    1/2 cup ranch dressing, 1/4 cup salsa, 2 Tablespoon mayo, 1/2 teaspoon chili powder, 1/2 teaspoon cumin, 1/4 teaspoon cayenne pepper
  • In a large bowl mix together lettuce, corn, beans, cheese, tomato , avocado, and black olives.
    1 cup corn kernels, 15 oz beans (kidney, pinto, black beans, 1 cup cheddar cheese, 1 cup diced tomato, 1 avocado, 1 head iceberg lettuce, 1/2 cup sliced black olives
  • Top with taco meat and Doritos.
    10 oz Nacho Cheese Doritos
  • Pour dressing over the salad and toss until everything is well combined.
  • Serve immediately.

Notes

Toss and add dressing right before serving or the Doritos will get soggy.

How to Make Dorito Taco Salad

  1. Cook the taco meat – Brown the ground beef in a skillet, then stir in taco seasoning and simmer until thickened.
  2. Mix the dressing – Combine ranch, salsa, mayo, and spices in a bowl until smooth and chill until ready to use.
  3. Prep the veggies & toppings – Chop the lettuce, dice the tomatoes and avocado, and get everything else measured and ready.
  4. Toss the salad base – In a large bowl, combine the lettuce, corn, beans, cheese, tomato, avocado, and olives.
  5. Add the meat & chips – Top the salad mixture with warm taco meat and a handful of crushed Doritos.
  6. Dress & combine – Pour the dressing over the salad and toss gently to coat everything evenly.

  • Use warm meat for best flavor – Adding the taco meat while it’s still warm helps slightly melt the cheese and blend the flavors.
  • Don’t skip the crushed chips – Crushing the Doritos just a bit gives you perfect bite-sized crunch without overwhelming the salad.
  • Toss just before serving – To avoid soggy chips, wait until you’re ready to eat before mixing everything together.
  • Customize the spice level – Adjust the cayenne and chili powder in the dressing to make it milder or spicier.
  • Swap out the protein – Ground turkey, shredded chicken, or even black beans alone work well if you want a different option.
  • Make it ahead, just not all together – Prep the components in advance but store them separately to keep everything crisp.

Storage & Make-Ahead Tips

This salad is best served the moment it’s assembled, the Doritos are at peak crunch and the taco meat is still warm. That said, you can absolutely prep most of it ahead of time and throw it together in minutes when you’re ready to eat.

Make-Ahead Tips

  • Cook the taco meat up to 3 days ahead and store it in an airtight container in the fridge. Reheat in a skillet with a splash of water before adding to the salad.
  • Mix the dressing up to 5 days ahead and keep it refrigerated in a jar or sealed container. Give it a stir before using.
  • Chop and prep all the veggies (lettuce, tomatoes, olives, corn, beans) up to a day ahead and store them together in the fridge.
  • Wait to dice the avocado until just before serving to prevent browning.
  • Keep the Doritos in the bag until the very last minute. Add them right before you toss and serve.

Storing Leftovers

Once the salad is dressed and tossed, it doesn’t store well, the Doritos get soggy and the lettuce wilts. If you know you’ll have leftovers, keep the components separate:

  • Taco meat: Fridge for up to 3 days in an airtight container. Reheat before serving.
  • Dressing: Fridge for up to 5 days in a sealed jar.
  • Chopped veggies (minus avocado): Fridge for up to 1 day.
  • Doritos: Store in the bag at room temperature. Add fresh to each serving.

Tip: This recipe is great for potlucks because you can transport everything separately and assemble on-site. Just bring the dressing in a separate container and let people dress their own portions.
